How to prepare polenta:

Put the water to boil in a cauldron together with the salt. Sprinkle a little corn on top. How we prepare the Christmas meal

No matter how much we care about the figure, it's not like Christmas if we don't eat two sarmale and a slice of cake. Therefore, we asked Florica Ursu (photo below), chef at & # 8220Caredy & # 8211 Casa Ardeleneasca & # 8221 (str. Sofia no. 1, Bucharest), to reveal some recipes for traditional dishes.

In a bowl, boil 1 liter of bread with salt and oil. After the water has boiled for a few minutes, slowly add the malai (200 grams in total), stirring constantly with the whisk. Boil over medium heat for about 15 minutes.

Ingredients for 40 sarmale: 500 g minced pork, 500 g minced beef, 100 g rice, 1 kg sauerkraut, 200 g onion, 100 g homemade lard, bacon mantle, salt, pepper, paprika, thyme , marar.

Preparation: Finely chop the onion and put it in a frying pan in 100 g of homemade lard. After the onion is browned, add the beef and pork, then the rice. Add the spices (salt, pepper, thyme, paprika, dill to taste). After it has hardened well, this composition is set aside and the cabbage leaves in which the sarmales are wrapped are prepared. The cabbage leaves are cut in half and filled with the resulting composition after hardening. In a cauldron, boil the 40 sarmale over a layer of finely chopped cabbage. After putting all the sarmales in the bowl, add another layer of chopped cabbage and pour water. After they have boiled well, wrap the sarmales in a layer of bacon and put them in the oven. Leave until au gratin. Serve with sour cream and polenta.

ARDELENESC PLATEAU

smoked ham, pork chops, homemade sausages, peasant ham, imperial bacon, homemade bacon, red onions, hot peppers, bell peppers, brandy, red wine.

In a bowl, boil 1 liter of red wine, over which sugar is added to taste, cinnamon, pepper. For the aroma, you can also boil an orange slice. It is ready after boiling. Serve immediately.

Dough: 1 kg flour, 100 g butter, 100 ml milk, 250 ml sour cream, a sachet of vanilla sugar, 3 egg yolks, 3 whole eggs, 300 g sugar, 40 g yeast, grated peel of a lemon and an orange.

Filling: 3 egg whites, 300 g ground walnuts, 100 g sugar, vanilla sugar, 5 tablespoons cocoa, 20 ml rum essence.
Preparation: Dissolve the yeast in 4 tablespoons of milk and 2 teaspoons of sugar. After the yeast has risen a little, put sifted flour in a bowl, make a hole in the middle and add eggs, leavened yeast, warm milk, sour cream, all the ingredients for the dough and warm butter. Knead very well. The resulting coca is left to rise. Meanwhile, prepare the filling: beat the egg whites, add the sugar and rum, then the ground walnuts. The trays should be slightly heated, then greased with homemade lard. Divide the dough in two, spread it out, and in the middle pour half of the composition and roll. Put in the pan. Leave it to rise in trays again. Before putting it in the oven, grease it with egg. Bake for 50-60 minutes. After half an hour, return the trays to the oven to increase evenly.
