Method

How to make baked squid

Start cleaning the squid (by clicking here you will find the guide).
Rinse them under running water then cut them into rings.

Put the latter in a bowl with the breadcrumbs, salt, semolina and grated lemon then mix everything to make the breading adhere well.

Then transfer the squid to a baking tray lined with parchment paper.
Drizzle with a little oil and bake in the oven at 180 ° C for 20 minutes.

Squid and potato rings

Squid with sauce

THE squid with sauce they are a simple and tasty second course. Few ingredients and few steps for a recipe that makes i special meals newspapers in family and in company. Being the Stewed Calamari they will be even softer and tastier if enjoyed the day after cooking.

  • 4 squid of about 200 g each already cleaned
  • 2 cloves of garlic
  • 2 salted anchovies
  • 1/2 chilli
  • a tin of peeled tomatoes
  • 35 g of salted capers
  • extra virgin olive oil
  • salt

The recipe for prepare the squid with sauce it's easy and pretty fast. It is a second dish perfect for those who do not like fish with thorns, but like the taste of the sea that molluscs provide.

The advantage of this recipe is that it can also be prepared in advance and served subsequently: being Stewed Calamariin fact, eaten after resting for a few hours, they are even tastier. One idea might be to serve them over a rustic toasted bread, as excellent single dish.

The large calamari, in addition to being irresistible if fried, the fried squid rings with curry panure amply demonstrate this, are particularly suitable for being stuffed. Baked squid

Today I want to show you the recipe for baked squid, I tell you that it is very easy and fast, of course fresh squid will be used as the final result will be better both for the decidedly better flavor and because the squid will be more tender.

Ingredients for 4 people:

4 large squid, 1 bunch of parsley, garlic, extra virgin olive oil, breadcrumbs, 1 lemon, 1 glass of white wine.


Take the squid, clean them and wash them under running water, then cut them into a circular shape. Put some breadcrumbs, minced garlic and chopped parsley in a bowl. Now take the squid already cut and dip them in the white wine, then pass them in the mixture made with breadcrumbs turning them on both sides so that they sprinkle with the mixture.

At this point take a baking dish, lay some baking paper and place the squid, let it cook and brown for about 20 minutes with the oven at 180 degrees. Serve the squid hot if you prefer with lemon juice.

Ingrediants

  • 1500 grams of squid
  • white wine for cooking
  • bread crumbs
  • 1 clove of garlic
  • various spices for fish
  • extra virgin olive oil
  • salt (just enough)
  • pepper (just enough)
  • parsley
  • lemon

Method

Step 1

Take the squid, clean them and rinse them in plenty of water, cut them into rings and set them aside. Take two bowls, in one you will pour the white wine and in the other, instead, a mix of breadcrumbs, minced garlic and various spices for the fish.

Step 2

Bread the squid by pouring them first in the wine and then in the breadcrumbs and place them in a pan that will go into the oven. When they are all ready, add salt and pepper and pour a little oil on top. Heat the oven to 180 ° and let the squid cook for about 20 minutes, you can also leave them a few more minutes by setting the temperature of the grill oven, so as to create a crispy crust.

Step 3

When cooked, serve the dish with a squeeze of lemon and a few parsley leaves. If, on the other hand, you prefer an even lighter version of baked squid, then you can remove the breading and add the cherry tomatoes, perfect for a unique flavor.


Ingrediants

Clean and wash the squid thoroughly, remove the head, remove the cartilage, entrails, skin, cleanly cut the eyes and remove the central tooth. Cut the squid pockets into slices with a kitchen scissors and wash under running water. Arrange everything in a colander.

In a bowl, pour a drizzle of extra virgin olive oil and add the juice and grated zest of a lemon, the garlic and chopped parsley, the wine, season with salt and pepper and mix.

Add the squid to the bowl with the sauce and turn them with your hands to better flavor. Let it rest for about 30 minutes, taking care to mix it from time to time.

After the time has elapsed, heat a pan without handles that can go into the oven, add the well-drained squid and brown adding a little marinade if needed. Cook until they are golden, dry and soft.

While the squid are cooking, prepare the breading: in a mixer add the crumbs of homemade bread, season with salt and pepper, add a sprig of parsley, a teaspoon of grated lemon zest, a drizzle of oil and chop everything not very finely.

Sprinkle the already cooked squid evenly with the flavored bread and bake in a preheated oven for about 10/15 minutes. At the end of cooking, the breading should be crunchy and golden.

Remove from the oven and serve immediately.
