There is nothing better than using a real home made mayonnaise for this recipe but when I don't have time, I buy some at the supermarket and use it. This sauce is very good with cold fish or red meat.

Mayo, capers and cornichons make up the bulk of flavour in this recipe. The mayo gives this sauce it’s creamy texutre and the capers give it a peppery, fishy bite. This dish is classically served with fish, chips and mushy peas. Tartare sauce is best served the day it’s made but can keep in the fridge covered with clingfilm for about 2 days.


How to make tartar sauce with pickles

1. Prepare the ingredients

Start off by chopping the onion as small as possible. You want to get it really fine. This is one of those ingredients that you can omit if you don’t like an onion.

I really like to use red onion because of its mild flavor. You might want to try shallots and if you do let me know how it was!

Next, you want to finely dice the dill pickles. One of the things that sets this tartar sauce apart from all the others is the pickles I use.

If you have never had the Claussen dill pickle they are incredible and I think they add a great flavor to the tarter sauce with a little bit of a garlic touch.

Take the seeds out of the center of the pickle by taking a spoon and dragging it through the center and scrape the seeds out.

2. Mix the ingredients

Squeeze the lemon juice out of the lemon into a separate bowl to make sure that you don’t add lemon seeds to the tartar sauce recipe.

Add all the ingredients into a small bowl and give it a stir. You want to be somewhat delicate so you don’t mush the pickles.

3. Refrigerate the tartar sauce

Take the mixed tartar sauce and put in into your fridge. You could serve it after you prepared it but it is better when it’s chilled.

You can store it in your fridge for a few days but I would not go too long. The acid from the lemon will breakdown the ingredients.

Method

Begin by making the tartare sauce.

Break the egg into the bowl of the processor, add the salt, garlic and mustard powder, then switch the motor on and, through the feeder tube, add the oil in a thin, steady trickle, pouring it as slowly as you can (which even then takes only about 2 minutes). When the oil is in and the sauce has thickened, add some pepper and all the other ingredients. Now switch on the pulse button and pulse until the ingredients are chopped – as coarsely or as finely as you want. Lastly, taste to check the seasoning, then transfer to a serving bowl. When you are ready to cook the skate wings, take the frying pan and put it over a gentle heat to warm up while you wipe the fish with kitchen paper and coat them with a light dusting of the seasoned flour. Now turn the heat up to high, add the oil to the pan and, as soon as it's really hot, add the skate wings.

Reduce the heat to medium and fry them for 4-5 minutes on each side, depending on their size and thickness. To test if they are cooked, slide the tip of a sharp knife in and push to see if the flesh parts from the bone easily and looks creamy-white. When the fish is ready, remove it to warm serving plates, garnish with the parsley and serve with the tartare sauce and lemon wedges to squeeze over.

Finely chop the capers, parsley, and gherkins then set aside

To a mixing bowl, add mayonnaise, chopped parsley, gherkin, capers, Worcestershire sauce, lemon juice, salt and pepper. Carefully whisk to combine, make sure all the ingredients come together.
