Whisk the egg whites with a pinch of salt. Add the sugar and beat until you get a hard and shiny foam, like meringue. Mix the flour with ground walnuts and baking powder, then lightly incorporate it into the egg white foam, mixing gently with a spoon, with movements from bottom to top.

The obtained composition is poured into a tray (25/35 cm) lined with baking paper and put in the oven over medium heat, until lightly browned on top, about 30-35 minutes. Remove the top on a grill and leave to cool.

Place the grated white chocolate on top of the cooled top on a large-mesh grater.

Cream:


The sugar is caramelized over low heat. When it has become liquid and golden in color, set aside and add the diced butter. Stir gently (pay attention to steam), put it back on the fire and stirring constantly, boil until the composition begins to thicken. Add the yolks one by one, mixing well after each one. The composition will thicken, reaching the consistency of sour cream. Add crushed walnuts (not ground).

Homogenize, let it cool a bit and pour the cream over the counter. We put it in the fridge.

Glaze:

Melt the chocolate in the microwave together with the butter and liquid cream. Homogenize, leave to cool and pour over the cake. Refrigerate for 2 hours, then portion.


Fluffy top with walnut:

Whisk the egg whites with a pinch of salt. Add the sugar and mix until you get a dense and shiny foam. We rub the yolks with oil, vanilla essence and almond essence over the egg whites and mix lightly. At the end, incorporate the flour mixed with baking powder and ground walnuts, mixing lightly with a spatula, with movements from bottom to top.

Pour the composition into the tray (20/30 cm) lined with baking paper and bake on medium heat (160 degrees electric oven with ventilation) for about 30 minutes. Remove the top from the tray and place it on a grill. Let it cool with the baking paper.

Cream for walnut cake:

Broken white chocolate and mixed with 200 ml whipped cream and melt in a bowl over low heat. Without boiling and stirring constantly, keep the pot on the fire until the chocolate is melted. Set aside, leave to cool a little, then put in the freezer for about 1 hour, until the cream cools very well and begins to harden.

The well-cooled white chocolate cream is mixed until it becomes fluffy.

In a bowl, mix the cream for the remaining whipped cream. When it starts to take on consistency, add powdered sugar and cream cheese. Mix until the cream becomes firm and fluffy.

Mix the white chocolate cream with the cream cheese and mix lightly until smooth.

The cooled top is cut into 3 parts, the cream is divided into 2 and evenly distributed between the tops. Wrap the cake in cling film and let it cool until ready to serve.
