The meat is washed, portioned and boiled in cold water with a little salt, approx. 25 minutes on medium heat, half covered. Foam as needed. The vegetables are cleaned, washed and cut into pieces. The greens are cleaned, washed and then finely chopped.
All this is briefly fried in a little sunflower oil and water. Add the boiled meat and strained juice. Season with salt, pepper, diced tomatoes and cook for approx. 25 minutes. Drizzle with beaten egg yolk.
