cup uncooked instant brown rice

    Heat oven to 350° F. In small bowl, mix rice and water; soak 5 minutes. Drain.

    Season both sides of each chicken breast with cumin, black pepper and coriander.

    Cut 4 (12 x 10-inch) sheets of heavy-duty foil. Spray center of one side of each with cooking spray. Spoon one-fourth of rice mixture onto center of each sheet. Top each with 1 chicken breast. Top chicken with one-fourth of green and red bell pepper slices. Top each with 1/4 cup of the salsa.

    Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal. Place packets on ungreased cookie sheet with sides.

    Bake about 30 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165° F). Let stand 5 minutes before serving.

Just FYI for anyone in the future who was wondering if you could make this with boneless Chicken Breast–You absolutely can and it is deeeelicious! I followed the pan searing directions for the chicken but after removing them, I set them aside until 25 minutes into cooking the rice portion in the oven. After 25 minutes I added the chicken breast on top and continued cooking it for another 25 minutes. I made it for my neighbors in need, but also made it for us. We loved it and they did too! Thank you!


  • large chicken boneless chicken breasts – filleted
  • frozen corn -You could also use 2 cans of corn.
  • black beans – drained
  • taco seasoning – We make homemade taco seasoning.
  • salsa- Try easy homemade salsa.
  • shredded cheese


Accidentally Wonderful

Season the chicken with a coating of taco seasoning and rub it into the chicken.
Brown the chicken in a very hot skillet. All you want to do is make the outside have a bit of color. Do not cook through. (This step could be skipped if you are short on time)

On a square of tin foil, lay the potato slices in the center and top the potatos with the chicken breast.
Spread two teaspoons of salsa on the top of the chicken and sprinkle with shredded cheese.

Wrap the chicken in the tin foil leaving some room for the heat to circulate.
Bake at 400 for 30-35 minutes.

To keep mine warm until dinner time, I placed the foil packets in my crockpot set on warm.
When you are ready to eat, everyone gets their own packet. Top the cooked chicken with sour cream, extra salsa/cheese, or black olives if desired. A great side for this dish is tortilla chips and cheese dip!

This is the only picture I took of the dinner. It's the chicken, pre-baked. We didn't unwrap the chicken after it was cooked until we were at our friends' house, so I didn't get a picture of the finished product, but trust me, it looked, smelled, and tasted amazing!


Skinny Mexican Chicken and Brown Rice Casserole


This casserole is so hearty and healthy with wonderful Mexican flavors. Leftovers freeze great. Each skinny serving has 299 calories, 8 grams of fat and 5 Blue WW Freestyle SmartPoints, and 8 Green. It’s so filling you’ll only need a simple salad to serve with it and you’ll be all ready for dinner!

Prep Time: 15 minutes (not including cooking rice)


Ingredients for Casserole:

1 cup uncooked brown Basmati rice, regular brown rice or long grain rice

2 cups frozen corn, thawed

1½ cups cooked chicken breasts, diced (skin removed)

1 (14.5 ounces) can fire-roasted diced tomatoes, undrained

1 cup tomato sauce, I like using jarred tomato sauce but canned is ok (8-ounce can)

1 cup (4 ounces) light Mexican-style four-cheese blend, shredded


Ingredients for Topping: optional

6 tablespoons fat-free sour cream or fat-free plain yogurt (optional)

1. Preheat oven to 350 degrees. Coat a 9 x 9-inch square baking pan or 2-quart casserole with cooking spray set aside.

2. In a large saucepan, cook rice according to package directions.

3. Meanwhile, in a microwave-safe bowl, add the onions and garlic and cook in the microwave for about 1 minute, to soften onions.

4. When rice is done, add it to a large mixing bowl. Mix in cooked onions and garlic, corn, diced chicken, tomatoes, tomato sauce, ½ cup of the cheese, chili powder, and cumin. Mix well. Transfer to the casserole dish. Sprinkle with the remaining ½ cup cheese. Bake, uncovered, for 20 to 25 minutes or until cheese is lightly browned and casserole is heated through.

5. Cool at least 10 minutes to set. Cut into 6 servings. If desired, top each with 1 tablespoon sour cream or yogurt, and 1 tablespoon salsa.


Prep Tips

If you don’t want to use cooked, store-bought chicken here’s an easy way to cook your own. In a large, nonstick pan, combine 8 to 9 ounces skinless, boneless chicken breasts and 1½ cups water. Bring to boiling reduce heat. Simmer, covered, for 12 to 14 minutes or until chicken is no longer pink. Drain well. Cool slightly. Dice into small pieces.
