The mushrooms are cleaned of skins and filaments, washed in a few waters, sliced ​​and lightly fried in a pan, over low heat and simmered, with the other vegetables, until soft. Add the tomato juice and after 2-3 minutes, remove the pan from the heat.

Peel a squash, grate it and slice it.

Choose the parsley leaves, wash, dry and chop.

Choose the rice, wash it in several waters and put it to boil. When it has boiled halfway, strain it and leave it to stand.

When the roots are almost cooked, add to the pot: hardened vegetables, half-cooked rice and sliced ​​garlic. Top up with warm water, if needed. Let the soup boil for another 3-4 minutes, season with salt and pepper, sprinkle with chopped parsley, put the lid on and take the pot off the heat.

After 10 minutes of "rest" the soup can be served.

1. Peel and finely chop the celery stalks, bell peppers, leeks and onions. We put the carrot and parsnip on the grater. If you do not have celery stalks, also use the root, given on the grater. I prefer this more rustic soup so I crush the tomatoes with a fork. Depending on how everyone prefers, the soup can be more or less creamy, meaning that all the ingredients can be blended.

3. After the vegetables have boiled for 10 minutes, add the mashed tomatoes. Also now add 2 bay leaves, a teaspoon of sugar and thyme sprigs. Simmer for another 15 minutes. Add the cup of rice and let it cook for another 5 minutes. Remove the sprigs of thyme, taste and season with salt. Flavor with chopped parsley, a little freshly ground pepper and put the lid on the pot. Leave it covered for 5-10 minutes, during which time we can toast the bread. We rub the hot slices of toast with a clove of garlic.

I understand to boil the rice in the soup but not separately to leave the taste in the juice. At the beginning, you can add even less water, depending on how consistent the soup is desired. It is eaten both hot and cold. Ripe tomatoes will come with a special flavor. When I eat, I grind another clove of garlic on the plate.
