I love making (and eating) this open sandwich on Sunday nights when nothing more is expected! Use any hard cheese you like but Emmentaler, Comte or Gruyère have more flavour and melt easily.

- 1 slice ham
- 30g grated Emmentaler or Comte cheese
- 1 tablespoon cream
- A few green peppercorns, crushed

- Place a slice of ham on the baguette and sprinkle over grated cheese. Place under the grill until the cheese has melted. Pour over the cream and sprinkle some green pepercorns on top.
- Serve with a salad.

Bologna and Cheese Sandwich | The Perfect Comfort Food Sandwich
Sometimes I write about Fancy Foods, but today, I am all about the humble bologna and cheese sandwich. A &ldquoBaloney and Cheese&rdquo is the perfect sandwich, whether you&rsquore a kid or whether you used to be a kid. It makes a great lunchbox sandwich for kids and former kids, too.
Not every kid-friendly sandwich deserves its own blog post, but when a sandwich is as nostalgic as this one, it deserves a love letter, don&rsquot you think?

Cheese Paste Sandwich Spread.
If you’re from the Caribbean and you’ve never had a cheese paste sandwich for lunch, your mommy didn’t love you . I’m just joking, but just about everyone I speak with about having cheese paste sandwiches, they can all relate.. no matter which island they’re from. Back in the day I recall people also adding a drop or two of food coloring to this wonderful cheesy spread to enhance the look of the finished sandwich. Green, pink, yellow and in some cases, blue.. do you remember?
Cheese paste is just a spiced up cheese spread that’s ideal on sliced bread and crackers.
3 cups grated cheese (old cheddar)
2 tablespoons grated carrots
1 tablespoon mayo
1 tablespoon butter (soft)
pinch black pepper
1/2 small onion grated
1 tablespoon prepared mustard.
dash peppersauce (hot sauce)
Notes : If it’s not getting smooth, add a tablespoon or 2 of milk as you whisk. To make the cheese easier to grate, place it in the freezer for about 10 minutes before grating to firm up a bit. You can certainly use a mixture of different cheeses if you like. I used what we had in the fridge. You can also add additional flavor by adding in some finely diced pimento peppers (aka seasoning pepper) to the mix.
Grate the cheese as fine as you can so the overall texture will be very creamy. Then place all the ingredients in a large bowl and give it a good mix as to incorporate all the flavors and give the cheese paste a lovely creamy finish.
This has got to be one of the simplest recipes I’ve shared to date and quite honestly.. one of my faves! There will be enough here for about 6-8 sandwiches (depending on how thick you spread it on) and if you don’t use it all the first time, it can store in the fridge for a couple days. Be sure it’s covered with plastic wrap or in an airtight container.

Fancy Cheese Dreams
These cheese dreams are flavored with Roasted Onion Base and prepared with baguette rounds for a twist on an old-fashioned appetizer.

|1 ½ cups||shredded aged white Cheddar cheese|
|¾ cup||unsalted butter, at room temperature, cut into cubes|
|2 tbsp||plain brick-style cream cheese, at room temperature|
|2 tbsp||Better Than Bouillon ® Sautéed Onion Base|
|1 tbsp||Dijon mustard|
|1 tbsp||finely chopped fresh parsley|
|1||baguette, cut into 32 rounds (1/2-inch thick rounds)|
Preheat oven to 375˚F. Using electric mixer, beat Cheddar and butter until smooth. Beat in cream cheese, Roasted Onion Base, egg, mustard and parsley until smooth.
Spread heaping teaspoonful of cheese mixture over half of the baguette rounds. Cap with remaining baguette rounds. Spread remaining cheese mixture over top and sides of sandwiches.
Place sandwiches on parchment paper–lined baking sheet, about 2 inches apart spray lightly with cooking spray.
Bake for 12 to 15 minutes or until golden brown. Serve warm.
Tips: For Bacon Cheese Dreams, top each sandwich with half a slice of bacon. Garnish with a sprinkle of chives if desired.
Best Bread For Gourmet Grilled Cheese
While there are some awesome, high-quality pre-sliced breads available, they just don’t really cut it for the “gourmet” effect we’re going for in this recipe. I highly recommend picking up an artisan loaf of bread from your local bakery, if possible.
I always love a good sourdough for making a gourmet grilled cheese (or any sandwich, really). If you can find one, I think a nice cranberry bread would add an even greater touch of flavour to this recipe!

Veggie avocado sandwiches, for example. Avocados are creamy, delicious and full of health benefits. Popping them in a sandwich is a great way to get a load of their goodness.
Aside from the classic avocado toast, you can smash them up with eggs or chickpeas or layer them with other veggies (or cheese – double-creamy!).

2 eater-sized walleyes, filleted and cut into 2-inch pieces
4 hoagie rolls, sliced, buttered, and toasted
1 cup New Orleans-style seafood batter (I used Louisiana Fish Fry Products’ New Orleans Style Fish Fry Seafood Breading Mix)
Vegetable or canola oil for frying
8 oz. bag of shredded Monterey Jack cheese
1 fresh tomato, thickly sliced
3 cups green cabbage, shredded
2 tbsp. apple cider vinegar
2 tsp. Worcestershire sauce
What to pair them with

How to make this easy pear sandwich
Because this pear sandwich is so simple, getting the perfect ratio of ingredients is key. Here are some notes:
- Make sure to slice the pear as thinly as you can.
- Toast the notes (see below), then chop them roughly.
- Slather on that cream cheese! You can also use labneh, a homemade yogurt cheese that’s very similar to creamy cheese.
- You want each ingredient to complement one another without anything standing out. If you’d like something saltier or sweeter, add a pinch of salt to the cream cheese or a drizzle of honey.
This easy fruit sandwich can be used with thinly sliced bread (even cinnamon raisin bread) to make finger sandwiches and served alongside a pot of tea for a truly decadent experience. Or you can enjoy it alongside a salad. If served with soup, we recommend choosing something that’s more savory. A Swiss Raclette cheese dinner meets a classic, American sandwich in this Grilled Raclette Cheese Sandwich recipe. Add a twist to your classic grilled cheese with this taste of the Alps!
April 12th is National Grilled Cheese Day. (Of course, this comfort-food sandwich has a day of it&rsquos own!) And, to celebrate, we have a fun bit of fusion cuisine for you today.
Raclette cheese is a semi-firm cow&rsquos milk cheese that comes from both the French and Swiss sides of the Alps. It can be found at specialty cheese shops, where you would ask your cheesemonger to slice you a wedge from the large, 13 lb, wheel.
This slightly nutty cheese has a wonderful flavor, similar to Gruyere. But, its best quality is the way it melts. That&rsquos probably why this cheese is most often found center stage as a part of a raclette dinner.
This Swiss/French dining tradition starts with a portion of a raclette wheel that is heated over a heating plate. As the cheese melts, it is scraped off of the wheel and onto your plate of boiled potatoes, pickles, pickled onions, and cured meats.
It&rsquos like a melt-and-pour version of fondue, and it is incredibly delicious.
An Epic Grilled Cheese
That&rsquos why we&rsquove taken the best parts of a Swiss raclette dinner and transformed them into one delectable grilled cheese sandwich.
You see where we&rsquore going here: roasted potatoes and caramelized onions, oozy raclette cheese and thick slices of French bread. We&rsquove added some kale for a little texture. And, yes, we even threw some dill pickle slices in there for good measure.
Sure, it might sound like a bit of an odd way to go about enjoying a grilled cheese. But, this isn&rsquot just a grilled cheese. It&rsquos a hefty, toasty, gooey, cheese sandwich that is packed full of the flavors of a traditional raclette dinner.
On The Flip Side
If potatoes, onions, and pickles sound like too much to stuff in your grilled cheese, go ahead and seek out your local cheese shop anyway for a wedge of raclette cheese. It really is a melting beauty and would make a killer grilled cheese, even without all of the &lsquodinner&rsquo add ins.
