For the cream, mix the coconut with the starch, add little by little milk and then put the mixture on low heat. You will see that it thickens a little (it's quite dense anyway). Let cool and add a little essence.

Rub the margarine a little in a bowl so that it dissolves, then add little by little the coconut composition and mix well.

For the icing, mix the egg whites with the sugar on a steam bath until the composition becomes a little harder, then let it cool.
