Marinate the dried fruit with the 3 tablespoons of rum.

Prepare the mayonnaise: make a mixture of yeast, 10 cl of warm water, a tablespoon of sugar and 4 tablespoons of flour.

Let it double in volume.

Meanwhile, beat the butter with the sugar, add the orange and lemon peel and gradually the eggs. Add the yeast, flour and salt.

Knead well to obtain a smooth and elastic dough.

Finally add the candied fruit and the soaked dried fruit.

Keep some fruit for the final decoration.

Sprinkle the dough with flour, cover with a kitchen towel and leave to rise for at least 5 hours.

After 5 hours we insert the figurine and make a thick circle out of the dough.

Place the circle on a baking sheet and let it rise again for an hour. I put a stainless steel form in the middle.

Preheat the oven to 180 °.

Before baking, grease the muffin with egg yolk mixed with 1-2 tablespoons of cold milk.

Decorate with sugar pearls and candied fruit. Bake for about 40 minutes.

Remove from the oven and grease with jam or jelly mixed with a little water.

It is a delicious muffin, it keeps very well for a few days in a plastic bag / bag.
