Well, Simina suggested a salad, possibly with ham and I decided that this suggestion would be the first (but not the only) one put into practice. I didn't put ham in my salad with asparagus and strawberries, but gorgonzola cheese, but I think that a little browned bacon and well drained of fat would be a perfectly valid protein alternative. Finally, if asparagus is clearly and for a long time in the top of our preferences, the strawberry dressing turned out to be a spectacle of flavors and color!


1 kilogram of potatoes, peel and cut in half
2 bouquets of asparagus
1/2 cup (1450 grams) with mayonnaise
2 tablespoons lemon juice
2 green onions, finely chopped
salt and black pepper
1/3 cup chopped parsley

If you follow me on my Instagram account, you already know that this was our Sunday night dinner. Basically a treat for our taste buds.

It is a salad, as I said, for spring because in May it is also the season of strawberries and asparagus, although these ingredients can now be found most of the time in stores. But now, during this period, they are "in high season", as they say, so clearly they will be even tastier.

Asparagus salad with strawberries and cheese is, like any other salad, an easy one to make. And fast. Asparagus, even if not eaten raw, has a very short cooking time.

For extra flavor I cooked it in the pan but for this asparagus salad with strawberries and cheese can also be used blanched asparagus, an operation that takes about 3 minutes (if we want to keep its green color) or even baked asparagus, in which case it lasts longer (about 15-20 minutes) or on the grill if not, in the pan.
