După ce s-au scurs bine de apă se toacă mărunt şi se pun într-un castron.

La fel de bine, gogonele se pot coace. Acestea se pot tăia în felii groase care se coc la grătar sau pe plită, câteva minute pe fiecare parte, până când se pătrund dar rămân ferme. Gogonele se curăţă apoi de coajă şi se taie în cubuleţe mici.

Ceapa se taie mărunt şi se amestecă cu gogonele din castron. Se adaugă sare şi piper după gust.

Usturoiul se taie mărunt cu ajutorul unui cuţit cu lama fină şi flexibilă şi se pune într-un castronel mic. Se toarnă apoi uleiul, sucul de lămâie, şi opţional câteva felii de ardei iute tăiate fin.

Se amestecă bine si se toarnă peste gogonele, după care se continuă amestecarea până ce toate ingredientele se combină.

Salata moldoveneasca de gogonele (patlagele) este o reteta simpla si buna pentru cei care tin post, pentru vegetarieni, dar si pentru cei care isi doresc un aperitiv de sezon gustos si usor de pregatit. Pentru aceasta salata am ales gogonele (patlagele) verzi dar si cateva putin parguite pentru o culoare mai frumoasa si pentru un gust mai bun.

Salata de gogonele, cunoscuta in mod special in zona moldoveneasca a tarii, intra la categoria aperitive.

Te duce oarecum cu gandul la salata de vinete, poate fi pregatite si cu vinete, asa cum facut here, dar o iubesc mai mult in varianta simpla. O mancam in fiecare vacanta de vara la tara, in judetul Vrancea. Iar pentru reteta de salata de gogonele nu avem nevoie decat de rosiile verzi, ceapa, ulei si sare. Pentru ca salata sa fie bunam folositi si patlagele ce incep sa se coaca. Vor da gust foarte bun.

Nu voi da cantitati fixe pentru salata moldoveneasca de gogonele. Pentru ca sunt persoane care folosesc mai mult sau mai putin ulei. La fel si sarea: eu pun o cantitate rezonabila, dar sunt persoane care obisnuiesc sa consume mancarea mai sarata.

Salata moldoveneasca de gogonele sau patlagele verzi poate fi pregatita de vara, pana toamna tarziu, cand se pun muraturile. Din patlagele se poate face si o dulceata foarte, foarte gustoasa.

Cand intra usor furculita in ele vom sti ca sunt fierte. Le scurgem, le lasam sa se raceasca, apoi le decojim.

Tocam rosiile verzi marunt, asa cum tocam si vinetele pentru salata si le lasam sa scurga intr-o sita.

Le punem intr-un castron si le frecam cu 2-3 linguri ulei (eu am avut 600 g gogonele, ulei punem in functie de gust si cat pot absorbi gogonelele- cred ca am folosit in jur de 100 ml). Adaugam sare si ceapa tocata marunt, amestecam si gustam pentru a verifica daca mai avem nevoie de sare sau ulei.

Salată de gogonele (pentru iarnă)!

Salata de gogonele este delicioasă. Fără îndoială, în timpul iernii ea vă va oferi multe clipe de bucurie și plăcere. Se prepară foarte ușor! Haideți să începem!


Din aceste ingrediente noi am obținut 10 borcane de 500 ml de salată de gogonele.


1.Tăiați gogonelele în felii, cepele — în semiluni și ardeii grași — sub formă de fâșii scurte. Dați morcovul prin răzătoarea mare.

2.Puneți toate legumele pregătite într-un vas potrivit și amestecați-le.

3.Adăugați sarea și zahărul. Stir. Lăsați salata să se odihnească pe parcursul a 2 ore.

4.Apoi adăugați uleiul și amestecați. Puneți salata pe foc și fierbeți-o timp de 35 minute.

5.Gustați salata (dacă este necesar, mai asezonați-o cu sare și zahăr bineînțeles, puteți să folosiți și condimente, precum piperul negru măcinat etc.). Adăugați oțetul și mestecați. Fierbeți-o pe parcursul a încă 5 minute.

6.Transferați îndată salata fierbinte în borcane sterilizate, închizându-le ermetic cu capace sterilizate.

7.Întoarceți conservele cu capacele în jos și înveliți-le cu o pătură călduroasă până se vor răci complet.

8.Transferați-le la locul de păstrare.

Dacă nu ați pregătit niciodată această salată, vă recomandăm să începeți conservarea cu o porție mică, deoarece în unii ani ni s-a întâmplat ca gogonelele să fie amare. De aceea, inițial conservați o porție mică, ca să testați gustul gogonelelor.

Salata de gogonele

Un alt mod in care poti pastra pentru iarna legumele. Combinatia este foarte buna simpla, pe paine prajita sau in salatele de cartofi, paste sau orez.

Ingredient: trei dovlecei mari, 1 kg de gogonele, trei ardei grasi rosii, frunze de telina, doi-trei catei de usturoi, jumatate de litru de otet, o cana de zahar (sau miere), o lingura de seminte de mustar, o lingurita boabe de piper, sare.

Preparation: Spala si curata legumele. Toaca-le pe toate, dovlecelul bucatele, gogonelele feliute subtiri, ardeii fideluta sau in robotul de bucatarie. Pune legumele toate intr-un vas si adauga trei linguri cu sare. Amesteca si asteapta sa lase suc. Amesteca zaharul sau mierea cu otet si pune pe foc siropul.

Adauga usturoiul tocat fin si toate mirodeniile, iar la final frunzele de telina. Clocoteste totul cateva minute. Siropul oparit rastoarna-l peste legumele puse cu sare. Pune totul pe foc, amestecand usor, exact 15 minute din momentul in care incepe sa clocoteasca. Pune compozitia in borcane, in raport egal legume si sos. Pune capace si fierbe borcanele in bain-marie, 10 minute din momentul in care fierbe apa.

Tocană de gogonele pentru iarnă

Tocănița de gogonele se prepară mult mai simplu față de zacuscă sau tocana de legume. Astfel, în sezonul rece, vă puteți folosi de acest preparat special fie pe cont propriu, fie alături de o friptură.


  • 500g gogonele
  • 1kg gogoșari
  • 500g morcovi
  • 250g ceapă
  • 150 ml oil
  • 20g zahăr
  • oțet
  • sare, piper, muștar

Pentru început, vom curăța foarte bine legumele și le vom pregăti. Morcovii se dau prin răzătoare, ceapa se taie în solzi, iar gogonelele și ardeiul se toacă în funcție de consistența dorită. Dacă vreți să aibă consistență de zacuscă, tocați legumele mai mic.

Folosiți o cratiță dintr-un material bun, cu fund dublu și adăugați uleiul. Puneți ceapa la călit și amestecați până când s-a înmuiat. Acum este momentul să adăugăm zahărul, o linguriță de sare și două linguri de oțet.

După ce amestecăm, putem adăuga și restul legumelor, adică morcovii, ardeiul și gogonelele. Amestecul trebuie să fiarbă bine, așteptând ca lichidul să scadă, iar legumele să fie moi. Amestecăm constant și punem câteva boabe de piper pentru gust.

Tocana este gata! O punem în borcane curate, le sigilăm cu capace noi sau fără imperfecțiuni și o lăsăm la răcit, acoperind borcanele cu o pătură. După ce tocana s-a răcit în voie, o depozităm într-un spațiu răcăros și umbros.
