Ingredients for 4 people

  • 300 g black rice
  • 200 g pre-shelled shrimps
  • 50 g butter
  • 1 clove of garlic
  • 1/2 glass of dry white wine
  • extra virgin olive oil
  • salt
  • pepper

Preparation

Cook the Venere rice in abundant salted water as indicated on the package.

In the meantime, heat a drizzle of extra virgin olive oil in a pan, add the garlic and peeled shrimps and cook for 10 minutes, blending with the wine.

When the rice is cooked, drain it and put it back in the pot, together with 2/3 of the cooked shrimps and the butter and stir for a few minutes over the heat. Then place everything on the plate, decorating with the shrimp you left aside.

Shrimp with garlic and oil

This is one of the recipes with faster shrimp to prepare.

Ingredients for 4 people

  • 800 g of shrimp
  • 1 clove of garlic
  • parsley
  • extra virgin olive oil
  • salt
  • pepper

Preparation

Clean the shrimps and put them in a saucepan in which you have heated a drizzle of oil with the garlic (peeled and lightly crushed) and sauté them over high heat for a minute.

Serve them immediately, sprinkling them with a little salt, plenty of pepper and a handful of chopped parsley.

If you like, you can flambé the shrimp with 1 shot of brandy or cognac after sautéing them.

The ideal is to accompany these shrimps with fresh or toasted polenta.


Cooking the shrimp

Depending on whether we buy them fresh, frozen or in brine, we will have whole shrimp (with the head and the carapace), only the shrimp tails (i.e. without the head) or i peeled shrimp (without head or carapace).

The edible part is the abdomen, commonly called "tail", but we still advise you not to throw it away waste of these crustaceans: with heads and carapaces you can in fact make a fish stock, perfect for cooking risotto or pasta.

Cook the cerfolio, pass it under cold water and mix it.
Add the cream.
Cook the shrimp, peel it and cut it into small pieces.
Add the concentrated milk to the shellfish broth and mix in the pieces of shelled shrimp and the dragocello.
Cook the Jerusalem artichoke in boiling salted water adding a few drops of lemon.
Mix it, add the broth with the shrimp, salt and chilli.
Place in bowls alternating colors and sprinkling with tarragon.

Ingrediants

We carefully wash the shrimps under running water, wash them a few at a time, putting under a colander, to collect even what we could lose. There is no need to remove the head, or the carapace. We let them drain in the colander for a few minutes.

We put a medium pan with abundant oil on high heat and bring to temperature.

In a dish we put some durum wheat re-milled semolina flour. We flour a few shrimps at a time, and gradually put them in the hot oil to fry. We do not overlap the shrimps in the pan, but leave them quite spaced so that in a few minutes they will be ready, crispy and golden.

We dry on absorbent paper as soon as they are ready, then transfer them to a serving dish, and continue frying the shrimp, always in the same way. We add a little salt once ready. We serve with lemon slices.

As we continue to fry the shrimp, if necessary we add more oil, or replace it, since we prepare up to 1 kg of shrimp. For 2 people I have prepared a deep fried with 500 g of shrimp, so for 4 people, if you want a generous fried 1 kg is fine.
