- 1 thick rasher streaky bacon
- 50g butter
- 125ml cream
- 40g grated Parmesan cheese
- 1/2 teaspoon ground white pepper
- 1/4 teaspoon ground nutmeg

- Bring a large pot of water to the boil. Add pasta and cook for about 7 to 8 minutes or until al dente; drain. Remove from pot, cover and set aside.
- Meanwhile, in a small frying pan cook bacon over medium heat until crispy. Break up into small pieces and set aside.
- In the pasta pot, melt butter over medium-low heat and add cream; heat thoroughly, but do not allow to boil. Combine cooked pasta with butter/cream mixture. Add Parmesan cheese and bacon; toss well. Allow sauce to thicken for a few minutes; add ground white pepper and nutmeg. Serve immediately.

I increased this to feed our family and it was great. A few changes to accomodate what I had on hand: I had no cream so instead I used 2% milk, so after melting the butter, I added a few pinches of flour to ensure I'd have a thicker sauce. I used regular black pepper and threw in some crushed red pepper for kick and left out the nutmeg. Whole family enjoyed this and I love how easy and quick it was to throw together. This is a family favorite. It's definitely a go to during the week, even for casual entertaining.
I've made this recipe repeatedly. Hard to believe it's light with all the cheese and bacon. Would be good with extra peas and maybe some mushrooms. I do use the big spaghetti pot to mix it, since it tends to overflow the skillet.
tried this last night, my sons and I found it not to be too bad. All of us agreed it was a bit bland and needed more salt or spices to get more flavor. Will make it again for sure but I think I will add either more cheese and more bacon. It was a great way to get my sons to eat peas! I also had let the hot water cooled down a bit so I didn't have a problem with the egg mixture going bad, also helped since my sons are in their 20's to help me out. Also used a big pan to mix all the ingredients together, a 12" pan is not going to cut it. I used a 24" pan which helped a lot, I'd say even a large pot so you can really stir things up would be better. Overall, I would say the longest part was cooking the bacon, but this is a recipe I will do again and add to my box. My sons already want me to do it again. I like it very much because I don't like traditional tomato sauce.

I do not use much salt besides the boiling water to cook the pasta. Why?

30-Minute, One Pot Easy Creamy Bacon Parmesan Pasta Recipe
This easy creamy bacon parmesan pasta recipe only has eight ingredients and takes about 30 minutes to cook from start to finish. The best part? It only takes one pan so clean up is a breeze.
Who doesn't love bacon? I mean, seriously. I don't know anyone who doesn't love bacon. It's one of the only foods in my family of picky eaters that everyone truly loves.
In fact, I came up with this recipe because we love to eat bacon but we wanted to eat it more often than just at breakfast or as a little extra flavoring in a dish.
I wanted a simple dish that had enough bacon in it that it would be filling and count as a main dish but would stretch my bacon farther - because if I let them my children would just eat a giant plate of bacon for dinner. So I took a bit of inspiration from my One Pot Chili Mac and came up with this one-dish recipe.
It's so easy because basically all you do is cook bacon in a pan, drain off the grease, add your pasta broth and cook it until it's done and has all the yummy flavor from the bacon grease and bits then add the crispy bacon back to the pan along with some cream and Parmesan cheese.
It's so simple my teenage son loves to make it, although I don't think I should compare his cooking abilities to most teenagers because he is getting to be quite the chef and cooks our family meals more often than I do now.

Fry the bacon until crispy for the pasta carbonara
In Italy, carbonara is made with guanciale (pronounced "gwahn-CHA-lee"), which is a cured pork product made from pig cheek or jowl. Guanciale has a distinctive porky flavor and the right amount of fat for giving the sauce a silky texture. But it's hard to find except at an Italian import food store, so a good substitute is bacon or pancetta. If you don't want your carbonara to have a smoky taste, you can do as Julia Child did and blanch the bacon first by simmering it in water for eight minutes. But if you don't mind bacon's smokiness, simply chop it into small pieces.
Heat a large skillet, and add the chopped bacon. Fry the bacon until it's crispy, then take the skillet off the heat. Remove the bacon with a slotted spoon — retaining the rendered bacon fat in the skillet — and set the bacon aside in a small bowl or on a small plate.
- 3 kohlrabi bulbs, trimmed and peeled
- 4 slices bacon, cut into small pieces
- ½ medium yellow onion, sliced
- 1 tablespoon olive oil, or as needed (Optional)
- salt to taste
- 2 tablespoons butter
- ⅓ cup grated Parmesan cheese
- 2 tablespoons minced fresh parsley (Optional)
Cut kohlrabi into thin noodles using a spiralizer.
Heat a large skillet over medium heat. Brown bacon and onion, until bacon is beginning to crisp and onion is caramelized but not burning, 10 to 12 minutes. Transfer bacon and onion to a small bowl, reserving 1 tablespoon bacon grease in the skillet.
Add kohlrabi noodles to the skillet and season with salt. Cook noodles over medium heat, stirring occasionally, until they begin to wilt down and soften, 12 to 14 minutes. Stir in butter until melted. Add in bacon and onion mixture and stir in 1/2 the Parmesan cheese.
It only takes 20 minutes, and every step is incredibly simple! Anyone can make this tasty dish.
