Sift the flour with the baking powder into a large bowl. Peaches in compote are finely chopped, fried in cocoa butter, then seasoned with cinnamon and lemon juice.

Meanwhile, melt the cocoa butter, leave to cool and mix with water, sugar, vanilla sugar, cocoa jam and powder. Mix the three compositions well until all the ingredients are incorporated. The obtained dough is poured into a tray lined with parchment paper, sprinkled with cranberries and baked in the preheated oven for approx. 45 minutes on medium heat. After passing the toothpick test, remove the cake from the oven and leave to cool.

For the icing mix the sugar with the cocoa powder, on a steam bath, add the oil and hot water, stirring continuously until a homogeneous icing is obtained. Pour over the cold cake, otherwise it may coagulate too quickly. At the end, sprinkle with ground walnuts with caster sugar.

Serve cold with a tasty coffee.

Negresa is a very beloved dessert, both for adults and children. First of all because it is very fast and easy to prepare.

Boil margarine together with: sugar, milk, cocoa. After boiling, take from this composition 15 tablespoons in which you add chocolate, rum, nuts (this will be the icing).

The rest of the composition is put to cool, after which the yolks are added, one by one, then the flour, the baked powder extinguished and the beaten egg whites. The composition for the blackberry is baked in a greased tray and lined with flour. When ready, pour the icing over it and sprinkle with freshly fried walnuts.

The blackberry can be syruped before putting the icing with a syrup of 200 ml of water, 7 tablespoons of sugar, vanilla sugar. Boil for a better taste, you can caramelize the sugar and add water, bring to a boil.

As well, this wonderful dessert is eaten next to a globe of vanilla ice cream.

And because over time I received comments about the ingredients, the last time I prepared it I weighed both the cup and the kitchen scale, although some of you said that a cup of flour is too little I stick to my opinion, a cup is enough, the dough should have the consistency of a pandispan, even a little thinner, two cups of flour would be a lot and in the end we will not get in any form a soft and moist blackness but rather a cake dry. I did a google search and I found a lot of identical or similar recipes and they all had 1 cup of flour or 250 grams or 300 grams of flour. Put butter, milk, sugar and cocoa in a pan on the fire and let it simmer until the composition is homogeneous. Set aside and allow to cool. We set aside a few spoons that we will use for the glaze.

The amount of flour depends on several variables, for example different types of flour have different liquid absorption capacities. Then the size of the eggs also matters, some are bigger, some smaller, the egg whites are beaten, it also depends on how well the egg whites were beaten and the list could go on.

Method of preparation

Prepare a tray or a small round shape (15 cm.) In which you will put the cake.

Grease it with a little oil (including on the walls) and place baking paper on the bottom.

If you want to use a larger form, double the amounts of ingredients, keeping the indicated proportions.

Finely chop the chocolate with a knife. Put it in a glass bowl.

Heat the coconut milk. When it is ready to boil, pour it over the chocolate.

Wait a minute, then stir continuously until the chocolate is completely dissolved.

The oat flakes are then added to the chocolate composition obtained.

Stir to mix. This will be the composition of the cake.

If you want, you can add other ingredients, such as raisins, candied cranberries, dried blueberries, chopped apricots, etc.

Transfer the composition to the tray. Level and cover with plastic wrap on top so that it does not dry out.

Refrigerate the cake for a few hours. It is best to leave it cold until the next day.

Unfold the culinary ring and gently peel the cake off the walls of the form with a knife.

Remove the cake to a plate and prepare the icing.

Heat the milk in a kettle. Chop the chocolate and place in a bowl. Pour the hot milk over it and after a minute, mix until a homogeneous icing results.

Pour the chocolate over the cake.

Put the cake back in the fridge and wait for the icing to harden for about half an hour.

If you want to decorate the cake with other additional ingredients, you can use various fruits or ground walnuts.


Ingredients cake with walnut leaves filled with jam and mascarpone cream

  • 5 sheets of cake with walnut 31 * 24 cm
  • 550 grams of peach jam (or apricot, or whatever you prefer)
  • 750 grams of mascarpone
  • 400 ml. whipped cream with 35% fat
  • 120 grams of powdered sugar
  • 3 tablespoons vanilla extract or 2 sachets of vanilla sugar
  • 1 pinch of salt
  • for the icing: 120 grams of white chocolate + 40 ml. cream for cream + 3-4 drops of natural food coloring (from beets)

How to prepare cake with walnut leaves filled with jam and mascarpone cream

SHEETS

I will not insist on the sheets. If anyone skipped the introduction of the article, I used it walnut leaves whose recipe can be accessed by clicking on the picture below.

Mascarpone cream

To fill this cake with walnut leaves, I chose vanilla mascarpone cream. A cream easier to make and at the same time, to fit so many cakes and pies, I can hardly imagine! We just have to keep in mind that both the mascarpone cheese and the whipped cream are very cold. Preferably, they should be cooled overnight in the refrigerator.

1. Open the mascarpone boxes and drain the whey cheese well. Sometimes a little whey is formed in the box, there is nothing wrong, we just don't need it.

2. Put mascarpone in a large bowl and add 400 grams of whipped cream, salt, vanilla and powdered sugar. Mix with the mixer, at first at minimum speed, until the whipped cream is homogenized with mascarpone and the powdered sugar is incorporated. Increase the mixing speed to the maximum and mix until the composition increases in volume and hardens well, holding on to the blades of the mixer. The cream for the walnut leaf cake is ready! We don't mix any more minutes, because we could ruin it, beating it too much!

Assembling the cake

1. To assemble the cake with walnut sheets and mascarpone cream, in a tray of the right size, place the first sheet of cake. Be careful how you handle the sheets, they are tender and can break easily. However, it is not very serious if they break, because the cream will gather them again, they will freeze and will not be noticed. However, sheets with cracks should be placed in the middle, not at the bottom or at the top.

2. Grease the cake sheet on the entire surface with jam. As you can see, I used a jam with whole pieces of fruit. It is peach jam which I had just prepared and I thought these pieces of fruit in the cake would feel interesting. Of course, you can also use a jam with a more uniform texture.

3. Continue to assemble the cake with walnut leaves adding the first layer of mascarpone cream. First we try to divide the cream as accurately as possible by 4, then we spread a quarter of the cream in an even layer over the sheet greased with jam. With a long spatula, we try to level the cream as well as possible, this will matter a lot to the final appearance of the cake, which must come out with straight and even layers.

4. Continue identically, sheet + jam + câte of cream, until we finish the cream, with the 4th sheet mounted.

5. Cover the cake with the 5th sheet and press lightly, lightly on the entire surface, trying to give it flatness. Wrap the tray and put the cake in the fridge for at least 3-4 hours, ideally overnight.

Finishing the cake with icing

After the cake with walnut leaves and mascarpone cream cools well, the sheets will become very tender. It's the right time to finish it with icing. To prepare the icing, break the white chocolate into equal pieces, place in a bowl with the whipped cream and place on top of a saucepan of boiling water. No more than 2 fingers of water are needed, because the bottom of the bowl must not touch the boiling water. The chocolate is allowed to melt slowly, steaming. Mix with the natural dye in the desired dose (not even bright red, a pleasant pink is enough). Pour the icing over the cold cake and level with a long spatula. Refrigerate until the icing hardens and can be portioned.

Serving and serving

The cake with walnut leaves filled with jam and mascarpone cream and glazed with pink chocolate is served with a long knife, with a thin blade, soaked in hot water and wiped after each cut. First straighten the edges then divide the cake into portions of the desired shape. I cut it into pieces of about 6 x 3.5 cm.

It's a soft and tender cake, with a very pleasant aroma. I hope you try it and like it!


Vegan chocolate buns

The icing is coarsely crushed. Heat the soy drink in a small pot, add the margarine and let it melt. The baking tray is lined with baking paper.

Yeast dough: Flour and yeast are placed in a mixing bowl. Add the rest of the ingredients together with the lukewarm mixture of soy and margarine drink and then mix all together with the mixer, at first briefly at low speed, then at maximum speed for about 5 minutes until a homogeneous dough is obtained. The covered dough is left in a warm place until it visibly increases its volume. Meanwhile, line the baking tray with baking paper and preheat the oven to about 200 ° C.

Knead the dough once more, briefly, on a work surface lined with flour. While kneading, incorporate the chocolate pieces. The dough is then spread in a round sheet with a diameter of about 30 cm. It is then cut into 12 pieces (in the form of equal slices such as cake) which are then placed in the baking tray. It is left to rest until it visibly increases in volume. Then grease with soy drink and bake.

Remove the buns with the baking paper on a kitchen grill and leave to cool. The buns can be frozen.
