From time to time, I mention in some recipes that olive oil would be preferable, but I do not want to scare anyone by adding it to the list of ingredients - unfortunately, olive oil is still too expensive for most of us.

1kg lamb entrails (I had: liver, kidneys, heart, lungs)
1 tablespoon vegeta
1 teaspoon paprika
Salt and pepper to taste
3 bay leaves
Method of preparation:
We take the lamb entrails, clean them, wash them and cut them into small cubes.
Peel an onion, finely chop it and put it in a saucepan with hot oil.
When the onion becomes glassy, add the paprika and mix.
Immediately add the diced entrails to the pan (ATTENTION, do not add the liver, because the liver is made very quickly, so we will add it towards the end), season with vegeta and pepper, mix and leave everything on the fire for 10 minutes.
After 10 minutes, depending on how much juice the entrails have left, we add a little more water, so that all the entrails are covered. I added 250ml of water. We also add 3 bay leaves. Then let it boil for about 30 minutes, during which time if the water decreases we can add a little more.
After 30 minutes of cooking, add the liver and let everything boil for another 15 minutes.
At the end, when the stew is ready, chop the green larch and add it to the stew. Bring to a boil and turn off the stew.
We prepare the dough. With your fingers, mix the butter with the flour. Add salt and cold water and knead a dough until it comes off the hand. You can add one or two more tablespoons of cold water if the dough is too hard.
Sprinkle flour on the work table and spread the dough. It must be larger than the shape and must not have a perfect shape.
We are preparing the filling.
