Today I had a craving for a refreshing dessert and I chose to make pudding with chia and strawberries. It is a raw pudding, so without boiling, ideal for hot summer days. An explosion of aromas comes out, the sweetness of the strawberries combined with the sweet-bitter taste of the carob powder and the sweet-sour topping. You have to try!
Chia seeds are extremely nutritious, have very few calories and many nutrients. They improve digestion, lower cholesterol levels and strengthen bones. They have a strong antioxidant effect and are gluten free.
The ingredients below are for two portions of pudding, of 200 g each.
- 400 ml coconut milk
- 80 g chia seeds
- 10 large strawberries
- 2 tablespoons agave syrup
- 1 teaspoon carob powder
- 1 tablespoon ground walnut kernel (optional)
- rum essence
METHOD OF PREPARATION:
1. Put the chia seeds in the coconut leaves, mix with a spoon and let them soak for 30-60 minutes. It should swell and the mixture thicken like pudding.
2. Put the strawberries in a blender until they form like a cream.
