Three Easy Steps For Making Homemade Flatbread

I’ve made these so many times and I’m still amazed at how easy and delicious they are. Here’s the basic process for how to make flatbread without yeast (the full ingredient list and method is below in the recipe).

  1. Mix flour, baking powder, salt, olive oil, and cold water together until a soft dough forms then cover the dough and allow it to rest for 10 minutes.
  2. Divide the dough into six equal portions and roll out into flat discs.
  3. Heat a skillet, add a little oil, and then cook them for a minute or two on each side. Enjoy!

How to make Flatbread – with NO yeast

This flatbread recipe is made with no yeast. It is very easy to make, requiring just a minute or two of kneading.

And it honestly is beautifully soft and pliable. So soft you can use it as a wrap and it won’t crack.

And of course, it is perfect to be used as pita bread, for things like Greek Gyros and Greek Chicken Souvlaki.

And here I have used it as “naan” as a side for Butter Chicken. When I make it to be like “naan”, I cook it on a slightly higher heat to get larger and more brown bits on it – just like real naan! The crust gets slightly crispier so it’s not as suited to use as a wrap, like in the above photo.

How to make Soft Flatbread:

  • Use an oiled or well floured rolling pin to roll out your flatbread.
  • Make sure to roll it really thin as it will puff up a fair bit when it cooks.
  • This flatbread will stay soft for days kept in an airtight plastic bag at room temperature.
  • Freeze this flatbread in an airtight container or a ziplock bag after it cools completely for up to 3 months.

How to Make Flatbread

Now that you have plenty of options for your flatbread, here’s how to make it. This recipe is vegan-friendly and does not require an oven (a welcome bonus during warm weather months).

It does, however, require yeast which makes the dough extra soft and chewy.

If you’re having difficulty tracking down yeast at the present moment, don’t despair. We also recommend this yeast-free flatbread option , but be advised that it contains dairy for those with dietary concerns. (Gluten-free roti is also worth experimenting with, and doesn’t use yeast either.)

Flatbread Ingredients

  • 2 cups all-purpose flour (plus extra for rolling out the dough)
  • ½ teaspoon sugar
  • ¾ teaspoon salt
  • 1 packet active dry yeast or rapid rise yeast
  • ½-¾ cups of warm water
  • 1 tablespoons olive oil (plus extra drops to coat the bowl)
  • Non-stick spray

Steps to Making Easy Flatbread

1. Evenly mix the dry ingredients in a large bowl. Make a well in the mix and add the olive oil and the warm water. Start with ½ cup and add more water if the dough seems too dry.

2. Gently fold the wet and dry ingredients together with clean hands, then knead for 30 seconds and shape into a ball. Evenly coat with a few drops of olive oil. Cover the bowl with plastic wrap and let sit for 1 hour if using active dry yeast or 10-15 minutes if using rapid rise yeast.

3. After the dough has proofed, lightly flour a clean surface and a rolling pin. Heat a non-stick skillet over medium heat.

4. In the bowl, carefully cut the dough ball into 6 pieces, and gently separate each piece into individual dough balls.

5. Take one of the dough balls and gently form it into a disk with your hands. Flatten it with the floured rolling pin over the floured surface, flipping two or three times and flattening more, until it’s 6-8 inches in diameter.

6. Spray the skillet with non-stick spray and add the flattened disk. Flip after two minutes and cook the other side for an additional two minutes (heat an extra minute on each side if you plan on using for dipping or pizza-style flatbread). While it cooks, flatten the next ball of dough.

7. Repeat steps 5 and 6 until all of the flatbread is cooked.

The flatbread is best served warm but can be refrigerated for several days and reheated in the oven at 350 for 3-4 minutes.

Flatbread dough

Based on the recipe in How To Bake by Paul Hollywood.

For the basic dough:
strong, white bread flour 500g
salt 10g
instant yeast 10g
unsalted butter 30g
water about 300mls

Put the flour in a large, warm mixing bowl and add the salt and the dried yeast. Add the butter and most of the water, then mix with your hands to bring the mixture together. Gradually add the remaining water until all the flour is mixed in.

Put the dough on a lightly floured board and knead for 5-10 minutes. When the dough feels smooth and silky, place it back in the mixing bowl, cover it with a warm tea towel and leave it in a warm place to rise for at least an hour until the dough has doubled in size. Tip the dough on to a floured surface, fold repeatedly until all the air is knocked out of it, then tear it into 12 equal pieces. Roll each piece into a ball.


The most simple flatbread is made by combining flour with a little salt, oil, and water. The dough is rolled out into small circles and cooked on a hot surface. Flatbreads are found in a variety of cultures around the world so there are lots of different preparation methods available.

For a crispy flatbread, simply increase the cooking time of your flatbread and cook until crispy. The heat will evaporate more of the liquid in the dough and create a crispier flatbread.
