RECIPE PREPARATION Strawberry liqueur:

We wash the strawberries and put the tail down. Place half of the strawberries in a 3 l jar then a few sprigs of mint and on top of the lemon peel. Add the rest of the strawberries, mint and squeeze the lemon juice on top. After we finish we add the sugar with the alcohol and close the lid of the jar well. We leave the jar in the dark for at least 2 weeks (but we still shake it from time to time).

After these weeks we strain the strawberry liqueur and put the strawberries in the freezer (we can use them for cakes).

  • 1 kg of well ripened blackberries
  • 400-600 g sugar
  • 1 l alcohol (between 60 and 90 °)
  • optional (cinnamon stick or vanilla pod)

Wash and drain the fruit well. Choose healthy fruits, without stains and well ripened.

Put them in a 3 l jar in layers, alternating them with sugar and cinnamon or vanilla pod (if you chose to use them). I put 600 g because I like very sweet liqueur but if not like so sweet, put only 400 g. Keep the jar in a cool place, shaking it from time to time.

After two or three days, when a thick syrup has formed, add the alcohol and mix well. Put the bowl in the pantry or in a cool place and leave it for 1-2 weeks. Then strain the fruit liqueur and keep in well-threaded bottles.

An ingenious way to preserve and enjoy strawberries in the cold season is in the form of liqueur. Strawberry is an alcoholic, sweet and fragrant drink, suitable even for women.

Strawberries are very healthy, rich in vitamins, minerals and antioxidants. They have effects diuretic, detoxifier and tonic.

Consumption of these fruits improves cardiovascular health, helps prevent myocardial and coronary heart disease, a cancer, of macular degeneration and arthritis.

Once you have washed them, pour them into a sieve with large holes and let them drain well. Then put them in a large glass jar, and add the sugar. Put the lid on and leave the fruit to soak for a few days, in a warm place, for a week at most. Shake the jar every day.

After the maceration period, drain the syrup left by the fruit through a gauze cloth and mix it with the alcohol.

Transfer the strawberry to glass bottles and store them in the pantry. It is good for consumption after 10 days. Serve in small glasses of 30-50 ml.

Strawberries left after straining the syrup should not be discarded. They can be added to various desserts: strawberry mousse, ice cream, tart, cake cream, etc.

Some people may have allergic reactions after eating strawberries or strawberries, manifested in the form of itching, digestive disorders or respiratory problems. Any fine homemade liqueur is prepared either with double refined alcohol (96 °) to be diluted according to the recipe, or with simple (38 ° -40 °) vodka, without flavors. Liqueurs should be between 18-22 °. We do not make liqueur with brandy or brandy because their smell negatively influences the aroma of the liqueur.

Mix the mascarpone cheese with the rum, 2 tablespoons of sugar and the vanilla extract. Let the cream cool as the tart crust cools. Fill the tart with mascarpone cream and garnish with slices of strawberries and mint leaves.

Capsunata is one of the few alcoholic beverages I make at home.

It is a recipe that I adapted to my tastes. It looks more like a strawberry liqueur because it is sweet, fragrant and beautifully colored.

For Strawberry, it is generally used for 1 kg of fruit, 1 l of alcohol (between 60 ° and 90 °) and 300 g of sugar. But, as I said before, this is a recipe adapted to my taste buds.

  • 1 kg of sugar
  • 1 1/2 l water
  • 1/2 l brandy

Method of preparation:

Put the strawberries in a strainer and pass them through a stream of cold water. After they have drained well, put the fruits in a jug, pour the alcohol over them, screw the stopper on or seal the jug and leave the fruit to stand for 1-2 months.

Strain the alcohol through a gauze or sieve. Prepare a thick syrup of water and sugar, boiling the water with the sugar over medium heat until it drops to half volume. When it has cooled, pour the syrup into the carafe, add the brandy, mix well and filter the liquid.

Pour the liqueur into clean, 500 ml bottles. Seal them tightly with corks and keep them cold, preferably in the cellar.

Blueberry or blueberry liqueur is a very aromatic drink, with a specific and characteristic taste of blueberries, a taste that I do not want to spoil with stinky brandy (called by some "brandy")! I don't want to drink something like that at all.

Of course forest blueberries they will give a darker color to this liqueur while those from the farm (which have a thicker shell and a white core) will lead to a more rosy refining. I used blueberries from the store precisely because many of you do not have access to the wild (forest) ones. In both cases the blueberries must be the "main character" and not the various undefined fruits of which some make "brandy, brandy or brandy". Here we are not talking about the authentic plum brandy or the clean brandy of pears, apricots or cherries that have over 55 ° even up to 60 °. These are not spoiled by a healthy person to prepare liqueur… In general, people have the impression that any "homemade" distillate with a few degrees of strength is good to put in cherries or other liqueurs. Wrong! Fine liqueurs are made with double refined alcohol or vodka because these two are neutral in terms of smell and do not interfere with the main ingredient: mint, raspberries, cherries, sour cherries, quinces, etc. - I leave the recipes at the end. Vodka and commercially refined double alcohol are made from cereals or potatoes, so they are also natural.

A fine homemade liqueur must have an alcoholic strength between 22 and 30 degrees.

From the ingredients below it results approx. 600 ml blueberry liqueur (refined).

Strawberry Cake and Berries Liqueur

Rub the butter with the caster sugar and vanilla sugar until a light cream is obtained. Put the yolks separated from the egg whites and the liqueur over the butter and sugar, mixing well until they are homogenous.

Separately beat the egg whites with a little salt, then mix with the composition made earlier, stirring gently from the bottom up. At the end, add the flour mixed with the baking powder (mixing carefully).

Homogenize the composition well and pour into a round shape greased with butter and lined with flour, with a diagonal of 22 cm. Bake in a preheated oven for 40-45 minutes, at the right heat.

After the countertop has cooled, remove it from the round shape and cut it into three equal layers.

The gelatin is dissolved in about 100ml of cold water and mixed with the liqueur, to be mixed in turn.

Put the cottage cheese in a saucepan and mix with the caster sugar and vanilla sugar. After mixing, add the yolks and mix continuously in the pan that will sit on the sea bath until the composition is well bound.

After the composition has been removed from the sea bath, add gelatin and liqueur, stirring until smooth and leave to cool.

Whisk the egg whites, as for meringue, then mix lightly with the whipped cream (which has already been beaten). When the first composition has cooled (the one with gelatin) mix with whipped cream and egg whites.
Strawberries are cut into thin slices.

After cutting the top, we put the first top, we syrup it with berry juice, we put half of the cream, the sliced ​​strawberries, the next syrupy top, the rest of the cream and strawberries again. Finally, put the last top that is syruped.
The cake is dressed in whipped cream and garnished with strawberries and whipped cream or according to everyone's taste.

After the cake is ready, it should stay cold for about 2-3 hours, but it is recommended to be from one day to the next, in order to bind the gelatin well to the top.
