Explosion of colors and flavors, surprising combinations of ingredients and textures, this is how Chinese cuisine could be described in a few words. Among the styles that have gained popularity in the world, the Cantonese one, originally from Guangdong Province, is perhaps the best known and appreciated. It is characterized by a perfect balance of flavors, the spices being used in moderate quantities, so as not to cover the taste of the basic ingredients.
I present to you, in the following, one of my favorite recipes: stir-fry of vegetables with beef. As it is quite difficult to find many of the ingredients used in Chinese cuisine, we combined fresh vegetables (carrots, leeks and bell peppers) with frozen vegetables (mixture of yellow carrots, baby carrots, bean sprouts, peas, Chinese mushrooms). , green garlic and water chestnuts) and vegetables in a Chop Suey jar (mung bean sprouts, Mu-Err mushrooms, red and green peppers). As for the sauces, apart from the soy sauce and chilli sauce, I used an oyster sauce with onions (with subtle flavors of garlic and ginger) and a Cantonese black bean sauce. Peel and wash the carrot and leek (only the white part). Cut them into sticks, using a grater. Cut in half the sliced bell peppers. Also, the beef is cut into thin strips (to penetrate quickly).
Heat the wok (I used an electric wok, because it is bigger, stronger and heats up evenly). Add the peanut oil and, when hot, lightly brown the beef strips. After three to four minutes, add the carrots and leeks. Stir quickly and leave for another two minutes.
Put the bell pepper and mix. Add the frozen vegetables. Homogenize. Leave for three to four minutes, stirring occasionally.
Add the black bean sauce, the oyster sauce, the soy sauce, the Five spices sauce and the drops of chilli sauce (depending on the taste, without making the preparation too spicy). Stir quickly, leave for another two minutes and turn off / take off the wok. Beef should be penetrated, but vegetables should be crispy (not soaked too much).
Serve the dish hot, along with a simple boiled rice, with just a pinch of salt.

For last night's dinner, I ran to Southeast Asia with these plump and pink shrimp, dipped in a creamy, fragrant and slightly spicy sauce, based on coconut milk and curry. The combination is delicious and goes great with a Thai flavored rice (jasmine rice). In addition, it prepares quickly and does not contain many calories. Mix the garlic, ginger, sesame paste, half of the sesame oil, rice wine, hot pepper paste, honey, lemon juice and the bottom in a blender and process until a homogeneous mixture is obtained. Transfer to a bowl, season with salt and set aside.

Supa cu noodles ramen
Supa cu noodles ramen. Ramen, reteta de supa cu taietei chinezesti din faina de grau poate fi facuta cu orice supa limpede de carne, fie ea din pui, cocos, rata, vita, porc sau peste. Este un fel consistent, ceva intre supa si mancare (este foarte deasa). Se serveste fierbinte si te ajuta sa treci mai usor prin zilele friguroase de iarna. Ghimbirul, usturoiul si ardeii iuti iti pun sangele in miscare iar legumele (crocante, gatite foarte putin) iti aduc aportul de fibre si vitamine.
Ramen face parte din categoria „supelor miraculoase” care te intremeaza cand esti racit. Legumele din ea sunt si cele uzuale, din piete – ardei, morcov, ceapa, usturoi dar si „exotice” – ghimbir, muguri de fasole mung sau de bambus, ciuperci mun (urechi de lemn). Cele din urma se gasesc in supermarketuri (Lidl, Cora, Auchan etc) si nu costa foarte mult. La o supa pentru 4 persoane am folosit cate 1/3 de borcan de muguri de fasole mung si bambus si o mana de ciuperci deshidratate.
Baza ramen-ului este o supa clara de carne, un „bouillon” facut pe carne cu os si multe zarzavaturi. Retete de supa de carne gasiti aici: stock de vita or consommé de rata (sau alta pasare).
Eu am folosit o parte din supa limpede de rata (consommé) pentru a prepara acest ramen. Taieteii sunt tot din supermarket (Lidl) si i-am cumparat in timpul Saptamanii Asiatice impreuna cu sosurile aferente: soy sauce (sos de soia), fish sauce (sos de peste) si otet de orez (rice vinegar). Am mereu in frigider sticlute cu aceste sosuri si ma tin destul de mult avand in vedere ca se dozeaza cu lingurita. In mod normal in ramen se pun si bucatile de carne fiarta din supa dar eu nu le-am mai avut (le-am facut salata), asa ca a ramas cu vegetale si cu gustul intens de rata.
