Taco Bell's Cantina Protein Chicken Bowl looks pretty healthy and delicious!

Taco Bell seems to be trying to shed its late-night greasy food image, and become relevant for all meals and lifestyles. First, they introduced a breakfast menu earlier this year, complete with the A.M. Crunchwrap and the Waffle Taco. Now Taco Bell is trying to become relevant to the health-conscious crowd who normally wouldn’t set foot in a Taco Bell, with items like a new Greek yogurt and “Cantina Power Protein” burritos and bowls that are high in meat and fresh vegetables, and all under 500 calories. The new Cantina bowls will be rolling out on July 17, while Taco Bell will be testing the Greek yogurt option starting August 4.

“We know that people aren’t looking for diet food, they are looking for food that gives them energy and freshness,” said Brian Niccol, the president of Taco Bell. “We have always loved the gourmet flavors in the burritos and bowls, but we would love to have all those flavors in a solution that gives our customers the protein they need.”

The Cantina Power Menu offers guests pico de gallo, fresh lettuce, and double portions of steak or chicken to jump-start their day. High-end Mexican fast food that offers burrito bowls… have we heard of that before? But when asked if Taco Bell is looking to compete with Chipotle and Qdoba, president Brian Niccol simply said that Taco Bell likes to compete in all arenas where people would eat away from home. We wouldn’t be surprised if next month, Taco Bell starts offering caviar in their quesaritos.

Yogurtland adds Greek yogurt to menu

Yogurtland is ringing in the New Year with new flavors, including the brand's first Greek yogurt flavor — raspberry banana. Also new to the menu is guava grapefruit sorbet and hazelnut latte yogurt.

The new offerings will be available starting Dec. 31.

"With Yogurtland's new flavors and new Greek frozen yogurt you don't have to sacrifice taste to find a healthy snack that supports your New Year's resolutions. We go to the source to find the best ingredients so that Yogurtland fans can enjoy spoonfuls of yogurt goodness that are also good for you," said Charlotte Lucich, director of marketing at Yogurtland.

Yogurtland's protein-rich, naturally flavored raspberry banana Greek yogurt features real Northwestern raspberries and bananas from Ecuador. This is the first Greek-style yogurt for Yogurtland and has a naturally thicker and creamier flavor.

Yogurtland's second non-dairy sorbet, the guava grapefruit sorbet, combines guava with grapefruit to give it a balanced citrus flavor. An 8-ounce serving of this flavor contains a full day's supply of Vitamin C.

For the no-sugar-added hazelnut latte yogurt, Yogurtland uses real hazelnut butter from Oregon combined with coffee flavor.

I decided to re-review El Pollo Loco's Crunchy Chicken Taco since they've made it bigger, but also a little more expensive. They've re-tuned it a little bit as it no longer contains a blend of cheddar and jack cheese, but just plain jack to go with shredded lettuce and pieces of flame-grilled chicken.
They're now $1.99, up from $1.69 when they first came out in 2007, which is not bad if you consider inflation and rising food costs.

I last wrote about these in 2009 when they when they were a bit smaller and cheaper and I realized I didn't write much about it at all so I'll remedy that now.

My local El Pollo Loco garners a good amount of business, so the turnover on chicken is pretty quick. As a result, the chicken is always juicy and usually hot off the grill. The chicken has a light, citrus flavor and is quite tasty off the bone, but finds itself a bit lessened in the confines of the taco shell against the lettuce and jack cheese. I could have used a bit more in the taco though.
The shell is thick, crunchy and a bit greasy. It can break at inopportune moments leaving you shoveling filling back into the taco.

The lettuce is fresh and the cheese has a nice moisture and creaminess.

Still, the overall effect is underwhelming without a bit of salsa from the salsa bar to liven it up. I've noticed this with quite a few El Pollo Loco dishes: they need the salsa. I tend to go with the spicy avocado salsa for a blend of spicy and creamy.

In sum, El Pollo Loco's Crunchy Chicken Taco is a decent buy that provides a very distinct profile of crunchiness, crispness, and tender chicken. There aren't any other fast food chains offering a crunchy chicken taco, except maybe Chipotle, but even Chipotle's version is a great deal different in flavors and textures.

Jack in the Box Tacos are a common order for many a late night food run. They consist of beef, American cheese, shredded lettuce, and taco sauce in a crunchy corn tortilla.

They are dirt cheap at two for 99 cents.

Jack in the Box's Tacos don't look very good (they looks gross actually, even for fast food) and what kind of taco has a half-slice of American cheese inside?! Also the beef is a mixture of beef and "textured vegetable protein" (like the cheap frozen burritos you buy at the supermarket). Compared to other fast food, the quality is pretty low, but I like 'em.

I think the way they cook these is they fry the meat and shell together before stuffing all the other ingredients inside. The shell is typically greasy and soaked in oil in some sections. There are some crunchy bits here and there.

The meat is paste-like, but flavorful. It probably contains a lot of seasoning because they don't give you much meat. The lettuce is filler and texture. And the taco sauce sets it all off with a tart, vinegary sweetness coupled with a slight heat.

Jack in the Box's Tacos are cheap food in every sense of the word. They're good in a guilty pleasure kind of way. Sometimes I just want one but it only cost 99 cents to get two (so I get two!).

The parfait is 250 calories, so go ahead and add that four-count grilled chicken nuggets at 140 calories to your order, she says. As far as skimping on the cheese, the company's app allows you to add or remove toppings from most entrées to create healthier choices on the go. The chain was also one of the first quick-serve restaurants to offer gluten-sensitive menu options, including a new bun.

Hands down, the nutritionists agree that the Grilled Chicken Sandwich is the healthiest of the poultry lot, with salads, surprisingly, coming in second.

"The grilled chicken sandwich comes with a fiber-rich multi-grain bun, lettuce, and tomato," says Jones.

Vinegar or mayonnaise? Red potato or russet? The variations of potato salad are endless it really all just depends on your particular taste. But one thing that always remains? Preparation is a snap, as other than boiling the potatoes, which you have already done, every other ingredient just mixes right together. Prep is, of course, minimal, and yields as many as you want (although the recipe here is for 12).

This pasta salad is packed with lots of veggies like greens and peas, protein-rich chicken, and of course, hard-boiled eggs (three for this recipe). The dressing gets it savory flavor from a hint of Dijon mustard and green onions. Within twenty minutes, you can put this whole thing together. It will yield about 12 servings, so know that you’ll have plenty of leftovers to munch on in the days after. Once assembled, it will need to chill for a few hours, overnight if possible. Then top with your favorite cheese and chow down!

You’ll get a boost of beneficial omega-3 fatty acids from the white tuna, and vitamins A, C, and K from the green beans. And don’t forget the signature ingredient: Niçoise olives! (Or Kalamata if you cannot find Niçoise.)

Never thought about grating eggs before? Well, neither do a lot of people. However, after tasting this dish, you may want to start grating eggs over everything you consume. This recipes makes four servings and is hearty enough to pass as your main dinner meal. You can use your favorite pasta, although tubular rather than strand pasta will give you the best results. Pressure Cookery

We've been wanting a pressure cooker for years, but it seemed so foreign and hard. I really didn't know where to begin to figure out what type to buy, or how to use it. And besides, I'd heard they were kinda pricey and my stovetop bean cooking method was working just fine--except when I burned them. Then it was really stinky.

Last year, my sister-in-law Tiffany bought a Cuisinart electric pressure cooker from Amazon and just raved about it. I was about to buy one when I saw that Costco started carrying it--for like $50 less than what other stores sell that model for. It did take me a little bit to familiarize myself with it. It is really so easy, but sometimes changing my routine is hard. I use it several times a day sometimes now. It is such a great way to make healthy, cheap, fast food.

The best thing about the pressure cooker is that it can take whole grains and legumes and cook them in just a fraction of the time that it would take on the stove, and I don't have to watch the pot at all. The speed has helped me to have the ability to cook something quickly when I am dropping my kids off at practices, and when our evenings are busy and I haven't planned ahead.

I love being able to wake up at 7:00am, put a cup of millet, a cup of steel cut oats, 4 cups of water in the pressure cooker. Set it for 8 or 9 minutes then go out for a run. When my kids come down for breakfast, their cereal is hot and ready. This makes for a leisurely morning. Millet was my favorite cereal from childhood. Unfortunately it takes forever to cook. So I was so happy that I can enjoy it now without all the effort.
My kids love hot cereal. I love how cheap and filling it is. I think we figured out that it is less than 10 cents per serving. Food doesn't get much cheaper than that.

It is similar to a crock pot in that you don't have to watch the stove. But it is much, much faster. This faster cooking preserves more nutrients. Plus, it has a saute feature so you can brown meat, carmelize onions, etc, all with just using the inner pot of the pressure cooker. Fewer dishes is always good.

I cook black beans in 28 minutes(no soaking required), split pea soup took 8 minutes, and really great fluffy yummy potatoes cook in 12, artichokes in 8. The potatoes are Jared's favorite. We quarter the gold potatoes from Costco, stick them in the pressure cooker with a couple cups of water. Cook for 12 minutes. Then he mashes them and adds greek yogurt and seasoning. They are the fastest and best mashed potatoes. They don't get as gluey from the starch in the water.

Last year we watched the movie Food Inc. I thought it was a great show and very interesting. One part that I don't know if I agree with is that it is cheaper to feed kids burgers than to prepare something at home. Sure, produce is pricey. But we have the same options here as the rest of the world that feeds their families for pennies a day. Rice, beans, lentils, bread, tortillas, potatoes, etc. All of those things are still really, really cheap, and eaten in the right quantities and with some fresh food are affordable to most everyone.

I just saw that Costco is carrying the pressure cookers again for fall. I think it is a good investment at $69. It comes with a recipe booklet. Some of the recipes look really good. Lentil soup, Pasta e Fagioli, Mushroom Barley Soup, etc. They look great! I was happy to learn a few new recipes for my pressure cooker in my class with Chef Brad at Education Week. He shares some of them here.

Memorial Day kicks off summer, pool time, picnics and barbecues. But its true purpose has faded. As we prepare a delicious real food feast, I want to always honor the fallen heroes who died fighting for the United States, a beacon of light in the world for more than 200 years.
