  • 1/2 medium sized potato, peeled and diced
  • vegetable oil
  • 1 red onion, sliced
  • 200g beef mince
  • 1 clove garlic, crushed
  • 1 pinch cayenne pepper
  • salt and pepper to taste
  • 1 tablespoon paprika
  • 2 tablespoons Bisto® gravy granules
  • 2 tablespoons frozen petit pois
  • 1/4 teaspoon paprika
  • 1 tablespoon butter
  • 2 sheets chilled puff pastry

  1. Pre heat the oven to 220 C / Gas 7, or as per puff pastry instructions.
  2. Place the diced potato in a microwave safe bowl, cover with water and cook in the microwave for 8 minutes or until the potatoes are softened.
  3. Heat a frying pan with a little oil and add the onion. Cook for 10 minutes or until softened. Add the garlic and mince. Stir frequently until the mince is cooked and browned. Add the drained potatoes and cook with the mince for a further 5 to 10 minutes.
  4. Add the cayenne, seasoning and 1 level tablespoon of paprika. Mix well.
  5. Make up the gravy granules with 60ml water, and stir well. It should be quite thick. Add pepper to taste.
  6. Add the peas to the mince along with the gravy. Mix well and set aside.
  7. Melt the butter in a small dish in the microwave. Stir in the 1/4 teaspoon paprika and set aside.
  8. Roll out the pastry just enough so that it will cover each pie dish top, with an overlap. Set aside.
  9. Divide the pie filling between the two dishes. Place the pastry lid on top. Cut two small slits into the top to allow the steam to escape and prevent the pastry from going soggy.
  10. If desired, crimp around the edges of the pastry. Brush the top with the paprika butter. You can also add a decorative pastry embellishment with any remaining pastry.
  11. Repeat with remaining pie. Place the pie pots onto a baking tray.
  12. Cook in the oven for 20 to 25 minutes or until the pastry is cooked, risen and brown.

Vegan cottage pie with sunflower seed mince

Cottage pie is something we don't have in Austria but since moving to London I have come to absolutely love it! The crispy mashed potatoes on top (and who doesn't love mash!) with the rich mince filling is an absolutely classic. So I wanted to create a vegan version that's made from scratch, is super easy, delicious and even cheap to make. Sunflower seeds don't cost a lot, but are rich in protein so they are the perfect mince replacement when processed into a coarse meal. You still get a bit of the crunchyness of the seeds but I quite like that. It's works well with the smoothness of the mash.

When I made the sunflower seed mince the first time I couldn't believe how much it looked like real mince. And the taste was incredible!

Beef, Mushroom & Cheese Pie Recipe

I have been working on my Beef Pie Recipe for a ridiculously long time. I’ve tried every possible Aussie Meat Pie Recipe and am always left less than thrilled at the results: my pies would always be either too saucy, too meaty, too bland…. however, my dear readers… I think I’ve done it!

Yesterday, I found myself craving a meaty/cheesy combo so rather than sifting through recipes online, I decided that maybe, just maybe, I’ll see what I can whip up by myself! I took copious notes as I went along, one hand stirring and the other hand writing madly, and here’s what I have come up with: a complete bastardization of every meat pie recipe in existence that, in my humble opinion, tastes absolutely amazing!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Large Onion, finely chopped
  • 375g Sliced Mushrooms
  • 500g Beef Mince
  • 5 Tablespoons Tomato Sauce
  • 3 Tablespoons Worcestershire Sauce
  • 1/2 teaspoon Soy Sauce
  • 1/4 teaspoon Oregano
  • Pinch of Salt
  • 1/2 teaspoon Cracked Pepper
  • 1/2 teaspoon Sweet Paprika
  • Gravox Gravy Powder (prepare 1 1/2 cups of gravy)
  • 450g bag of Shredded Mozzarella Cheese
  1. In a large saucepan or stove pot (Make sure it is large! You will be adding all ingredients to this pot!), sautee your onion in olive oil.
  2. Once your onion is just about cooked through, add in all your mushrooms and continue to sautee.
  3. Once onions and mushroom are cooked well, stir in your beef mince and cook until nicely browned.
  4. Now the fun part! Start adding in your spices while stirring well after each: Oregano, Salt, Cracked Pepper and Sweet Paprika.
  5. Stir in your sauces, again stirring well after each sauce addition: Tomato Sauce, Worcestershire Sauce and Soy Sauce.
  6. And finally, prepare 1 1/2 cups of gravy and stir into your meat mixture. Should you wish to make a thicker mixture, sprinkle more gravy powder into the pot and stir well. Alternatively, you could also use cornflour.

Making the Pies

Now that your pie filling is ready, it’s time to prepare your pastry! If you are keen on making your own pastry, click here for a shortcrust pastry recipe and here for a puff pastry recipe. I’ve used store bought pastry (yes I cheated!) for my pies. As I like to make a ridiculous amount of pies (some for dinner, some for the freezer!), I use my Sunbeam Pie Maker to prepare ready to eat pies. This recipe gave me about 18 single serve pies. Of course, you can opt to use a pie dish: this recipe should give you 2 large family size pies.

  • Using a Sunbeam Pie Maker: Lightly grease the inside of your Pie Maker and allow to warm up. Press out your shortcrust pastry bases and puff pastry pie lids using the cutter provided in the box. Once ready, line the bases and scoop in your meat mixture. Cover the meat mix with a sprinkling of Mozzarella Cheese and then place your pie lid on top. Cook according to the instructions, and there you have it!
  • Using Pie Dishes: Preheat your oven at 180 ⁰C. Grease 2 large family pie sized baking dishes and line with shortcrust pastry. Pour in your meat mixture and cover with shredded Mozzarella Cheese before covering over with puff pastry for the lid. Press the edges down using a fork to achieve that lovely traditional pie look we all love, and cover with an egg mix (whisk 1 egg with a tablespoon of milk) as a glaze before placing in the oven. Bake for approximately 35 minutes, or until golden brown. Handy Hint: Your pie base should also be a light golden brown once cooked through. If you find your pie lid is already golden but your base is still white, cover the pie with foil and place back in the oven until cooked through.

Moroccan Beef Mince Stew

With its rich taste, super easy cooking technique and fast preparation, this Moroccan Beef Mince Stew is a winning recipe for any day of the week

Ingredients

  • 1 red onion, chopped fine
  • 2 cloves garlic, crushed
  • 200g beef mince
  • 1 red chilli chopped fine or 1 tsp dried chilli flakes
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 500 ml chicken stock
  • 200g tinned tomatoes
  • Squeeze lemon juice
  • Yoghurt, chopped mint or parsley for garnish
  • Drizzle of good olive oil

Instructions

  1. Fry onions in olive oil until soft. Add garlic, smoked paprika, chilli, oregano and another splash of oil and saute for a couple more minutes or until spices are fragrant.
  2. Add mince and fry until browned and crispy (frying the mince until crispy causes caramelisation and when added to the soup base will produce much more flavour).
  3. Pour in the stock and tinned tomatoes, break tomatoes up with a wooden spoon, bring to the boil then simmer for 10 – 15 minutes or until slightly thickened.
  4. Remove from the heat, squeeze in lemon juice. Taste and season with salt and pepper if needed.
  5. Garnish with yoghurt and chopped mint or parsley. Drizzle with good quality tasting olive oil.

INGREDIENTS

500g organic mince (lamb, beef, venison or pork)

1-2 large frozen chicken livers, grated*

Grass-fed butter or ghee for cooking

Optional Add Ins: 1-2 Tbsp of mixed herbs such as dried thyme, oregano, rosemary or basil or a few tsp's of cumin, cinnamon, 5 spice and/ or chilli powder - to taste

INSTRUCTIONS

1. Add the mince, grated frozen liver, salt, pepper, garlic, onion, and herbs and spices into a bowl and use your hands to combine evenly.
2. Heat a frying pan on medium heat and add some coconut oil or ghee to the pan and allow it to melt all over.
3. Roll the mixture into meatballs using your hands and place them onto the hot frying pan. Make sure you don't overcrowd the pan, you may have to cook the meatballs in batches. Cook the meatballs on all sides until golden brown.
4. Once they’re cooked remove them from the pan and place them onto a plate to rest.
5. When they're all cooked you can serve them up.

Suggested Serving:with cauliflower puree, fresh leafy greens and cultured veggies. Or serve the meatballs on top of zoodles (zucchini noodles) and top with a beautiful homemade spaghetti sauce. Or simply serve with a fresh salad. These are also really delicious served with Gevityrx new Bone Broth Mayonnaise.

*TIPS

I place 4-5 chicken livers into zip lock bags and place them into my freezer drawers on a flat surface (trying to separate them in the bag), this makes it easier to remove 1 or 2 as needed.

The amount of liver you use depends on how much you like liver as someone who loves it, I used 2 large frozen chicken livers grated and the taste still feels “hidden” to me, but if your trying to fool kids.. perhaps start with 1 chicken liver your first time making this meatball recipe.

I also found thawing the liver for 2-3 minutes before grating them was much easier than grating it straight out of the freezer.


A Food Lover in London

Of all the Jamie Oliver recipe books I own (and I have many of them!), I think I love his Ministry of Food book the most. My friend (who refers to him as 'Saint Jamie'!) first introduced me to the book in 2010 and some of my all-time favourite dishes I make are from it. One of the recipes is for a 'Classic Mince and Onion Pie', which forms the basis of the meal I made for my family yesterday evening.

I actually had a whole load of new potatoes that needed finishing so instead of doing the pie, I decided to make the mince and onions and serve it with vegetables and the new potatoes that I roasted with garlic and rosemary. It worked out really well, and I suppose it was healthier than using a load of pastry to make it into a pie! So here is the Ministry of Food recipe I followed to make mince and onions.

Serves 4

Ingredients:

olive oil
3 onions
2 carrots
2 sticks of celery
2 sprigs of fresh rosemary
2 bay leaves
500g beef mince
1 teaspoon English mustard
1 teaspoon Marmite
1 tablespoon Worcestershire sauce
2 teaspoon flour, plus extra for dusting
beef stock cubes
