The Jewish holiday of Passover is deeply steeped in tradition. The Passover seder is a celebration of the Israelites’ exodus from Egypt and their freedom from slavery, and it is composed of specific parts to commemorate an important part of Jewish history. The seder's ceremonial plate wouldn’t be complete without its symbolic foods, including the charoset, reflecting the brick and mortar used to build the pyramids of Egypt during the Jews' slavery; bitter herbs to recount the difficult time spent in Egypt; hard-boiled eggs, to represent the offerings brought to the temple; and sprigs of parsley dipped in salt water to represent the salty tears shed by the enslaved Jews. And then of course there's the matzoh, to pay homage to the fact that the Jews didn't have time to let their bread rise when they hurriedly escaped from Egypt.

While traditional customs run deep during this Jewish holiday, that doesn’t mean your Passover recipes have to be old-fashioned. Elana Horwich, home cook and founder of Meal and a Spiel, shows us how you can reinvent the Passover meal with new and exciting recipes. Taking the lessons she learned from her Jewish grandmother, Horwich adds a modern-day touch to some of the most traditional Passover dishes, and she also adds in a few of her favorite recipes that she believes should become a part of your holiday feast.

3 Tasty Easter Recipes

1. Easter Roasted Leg of Lamb

Servings: 8 Active Time (Prep): 15 mins. Total Time: 14 hours 50 mins.

Ingredients:

1 5- to 7-pound, bone-in leg of lamb, trimmed

1/3 cup fresh oregano leaves

1/3 cup fresh rosemary leaves

1/4 teaspoon black pepper, freshly ground

Directions:

  1. Place the oregano, rosemary, salt, pepper, and lemon zest in a food processor and process until blended, for about two to three minutes. Coat the lamb in rub mixture and transfer to a rack in a roasting pan. Refrigerate for 12 to 24 hours.
  2. Allow the lamb to sit at room temperature for 30 minutes.
  3. Preheat the oven to 450 degrees F and brush lamb with olive oil.
  4. Bake at 450 for 45 minutes.
  5. Reduce the oven to 350 and bake for one hour. (A meat thermometer inserted into the thickest portion should show 145 F.)
  6. Let the lamb cool for 20 minutes before serving.

2. Colorful Roasted Easter Veggies

Servings: 8 Active Time: 25 mins. Total Time: 1 hour 15 mins.

Ingredients:

1 pound cipollini onions, peeled

2 tablespoons white balsamic vinegar, divided

3 tablespoons olive oil, divided

3 teaspoons kosher salt, divided

1 1/2 teaspoons cracked black pepper, divided

8 topped baby beets, peeled and halved

1 pound small topped carrots

Directions:

  1. Preheat oven to 500 degrees F. Place bay leaves, cloves, onions, one tablespoon of vinegar, one tablespoon of olive oil, one teaspoon of salt, and a quarter teaspoon of black pepper in a medium-sized bowl. Toss well.
  2. In a large bowl, place beets, rosemary sprigs, honey, one tablespoon of vinegar, one tablespoon of olive oil, one teaspoon of salt, and a half teaspoon of black pepper. Toss well.
  3. Tear a large piece of heavy-duty aluminum foil, and place beets in the center in a single layer. Fold the sides of foil over the beets, double-folding on the top and side edges to seal and create a packet. Place the packet at one end of a small, rimmed baking sheet pan.
  4. Bake beets at 500 for 15 minutes.
  5. While the beets are baking, cut one orange half into six wedges. Squeeze the juice from other orange half (about 1 1/2 tablespoons of orange juice). Trim the tops of the carrots down to one inch of greenery. In a large bowl, toss together carrots, orange juice, orange wedges, thyme sprigs, and leftover olive oil, salt, and pepper.
  6. Remove pan from oven. Place the carrot and onion mixtures next to the foil packet, spreading them into a single layer. Return to oven, and bake beets, onions, and carrots for 25 minutes.
  7. Let cool 10 minutes combine veggies and serve hot.

So you’ve had a healthy Easter dinner recipeand side, let’s party a little bit for dessert. We won’t go overboard, but there will be a touch of sugar in these portion-controlled pickables!

Servings: 12 Active Time: 30 mins. Total Time: 1 hour 20 mins.

Ingredients:

3/4 cup unbleached white whole wheat flour

1 1/2 teaspoons baking powder

2 teaspoons vanilla extract, divided

4 teaspoons lemon zest, divided

3/4 cup chopped strawberries

1/3 cup confectioners’ sugar

8 ounces cream cheese, at room temperature

3 to 6 drops all-natural food coloring (pomegranate juice, raspberries, hibiscus flowers, etc.)

Directions:

  1. Preheat oven to 350 degrees F. Place paper liners in 12 half-cup muffin cups.
  2. In a medium-sized bowl, whisk together all-purpose flour, whole wheat flour, baking powder, and salt.
  3. Using an electric mixer, beat sugar and butter in a large mixing bowl on medium speed until creamy. Add in vanilla, two teaspoons of lemon zest, and two eggs beat until combined. Keeping the mixer on low, alternately mix in the dry ingredients and milk, starting and ending with dry ingredients, until combined. Scrape the sides of the bowl as needed. Fold in strawberries. Fill the muffin cups with equal amounts of batter.
  4. Bake for 18 to 25 minutes, or until a toothpick comes out clean. Transfer to wire rack and allow to cool completely.
  5. While cupcakes are cooling, combine confectioners’ sugar, cream cheese, lemon juice, leftover lemon zest, and food coloring in a mixing bowl. Blend with an electric mixer until smooth. Refrigerate for one hour.
  6. Spread a full tablespoon of cream-cheese frosting over each cupcake and top with a lemon slice and mint leaf.

A Passover-Ready Recipe From Tiktok’s ‘Modern Mensch’

PUMPKIN-SPICE BABKA. Shakshuka alla vodka. Challah panzanella. According to Jake Cohen, these recipes qualify as “Jew-ish.” This month, Mr. Cohen, 27, a food writer and gregarious social media star with a devoted following on Instagram and TikTok, unleashes the notion on the world in “Jew-ish: A Cookbook: Reinvented Recipes From a Modern Mensch” (Houghton Mifflin Harcourt). Published just in time for Passover, it’s Mr. Cohen’s personal, uniquely millennial interpretation of Jewish cuisine, including the Ashkenazi dishes he grew up with, the Persian- and Iraqi-Jewish recipes that he learned from his in-laws, and the foods that simply capture his imagination.

Some of the recipes might seem unorthodox, but they reflect a larger reality: Many secular Jews connect most meaningfully to their heritage through food. The tone is as earnest as it is tongue-in-cheek. (Don’t miss the author photo, a yearbook-style portrait of Mr. Cohen flanked by challahs.) For Mr. Cohen, a habit of hosting Friday-night dinner with his husband gave rise to an eclectic repertoire of recipes and rituals. He writes: “It was about taking a moment at the end of the week to pause and actively exercise gratitude, to strengthen and build our community, and to simultaneously do the one thing we enjoy most—eat.”

The kitchen tools I can’t live without are: tongs of varying lengths—at least four different sizes for all different applications. I use two at a time when I’m searing brisket. I’m always throwing garlic to roast in the back of the oven and using tongs to pull it out. I have a mini offset spatula and a mini rubber silicone spatula, and I end up using those multiple times a day. I like the concept of having something little—it just gets into every nook and cranny.

My pantry is always stocked with: lots of sumac. I sprinkle it on roasted veggies, add a pinch whenever I make anything with chocolate, and stir it into my morning yogurt. And lots of baking ingredients. I must have multiple types of flour, sugar and salt at all times. I am always ready for a batch of chocolate chip cookies, so the dry goods have to be there.

My refrigerator is always stocked with: oat milk and cold brew and eggs. I could eat scrambled eggs every day for the rest of my life and be content. And butter because, like I said, I do a lot of chocolate-chip-cookie baking.

Chunky Passover &ldquoPeanut Butter&rdquo Ball Pareve Ice Cream (non-dairy)

Erev pesach I tend to make my quickest, simplest recipes that stay well in the freezer, so I am not left with an overwhelming amount of cooking to do right before Yom Tov. Homemade ice creams are delicious and a total crowd pleaser! These can served in martini glasses with chocolate shavings and crushed nuts for beautiful presentation or atop kosher for Passover ice cream cones for extra fun. Spice them up with warm banana slices on top.

NOTE: PEANUT BUTTER IS NOT KOSHER FOR PASSOVER, USE ALMOND BUTTER.

For the chunky Passover &ldquoPeanut Butter&rdquo balls (recipe is made with ALMOND butter, not peanut butter)

  • 1/2 cup creamy ALMOND BUTTER
  • 1 cup chocolate chips
  • For the Ice cream:
  • 1 (12 oz) container pareve whipping cream
  • ¼ cup honey
  • ¼ cup creamy ALMOND BUTTER
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon Passover vanilla extract
  • ¼ teaspoon salt
  • ½ cup shaved chocolate or chocolate chips, optional

Line an 8 x 8 inch baking pan with aluminum foil and grease well.

In a bowl mix almond butter with the chocolate chips. With two spoons, drop ½ - 1 teaspoon spoonfuls of mixture on the aluminum foil. Put in the freezer to harden.

In a blender, mix whipping cream, honey, almond butter, cocoa powder, vanilla extract and salt Blend for 30-60 seconds or until the mixture is smooth and creamy. Place in a glass freezer safe container for 20 minutes. Remove from freezer, and with a spatula fold in frozen chunky balls and shaved chocolate or chocolate chips, if using. Return to the freezer (about an hour). Remove from the freezer a few minutes before serving for easier scooping.

Quinoa is an often overlooked grain that provides a unique texture while also contributing loads of protein and fiber. It has a low glycemic index, which helps maintain a steady blood sugar level. The egg in this recipe provides excellent protein, as does the avocado, which is also considered a “healthy fat” (learn more about different dietary fats here ).


Making Matzo Balls With Preschool Children

The craft of making Matzo Balls can be turned into a fun and educational cooking activity to do with preschoolers ages three to five. At this point, they already love to play with Play-Doh and mold it with their hands.

Here they can do all of the pouring and mixing steps that are on the box. After the dough has cooled for a bit in the fridge, which I will have to check on that particular step the next time I have a box, then you can take the bowl out, give each child a place mat or piece of wax paper with a glob of the dough on it, and let them play with it for a while.

While they are playing, you can read a story to them or tell them a shortened Story of Passover. You can ask them questions, such as what kinds of things do they like to put into their soup?

Fill a soup pot with water. Do not heat it yet! Place the pot in the center of the table. Show the children the pot and explain that the matzoh balls will be cooked on the stove, in the pot and not in the oven.

The children will need to roll their dough into balls and place them into the pot, one ball at a time to avoid splashing.

This is a sensory baking project, because unlike most in-school baking activities (i.e. cookies, cakes, etc.), this one allows the children to bake with their hands. They can feel the stickiness of the dough. They can describe the texture. They can smell it, and at lunch, they can each taste a matzoh ball with their lunch or snack.

The recipe contains eggs, so you’ll want to make sure that your students are not allergic. Otherwise you can try Matzoh Pizza which is fun, easy, and can be made in an oven, toaster oven or microwave.

*I have done this cooking activity in a three-year old classroom before. The preschool where I lead this activity is owned and run by the YMCA. It was Passover at the time, and of course, Easter time as well. There were many Easter activities and crafts going on, but of course, not the same could be said for Passover. So after discussing my idea with the head teacher of the classroom, she felt that it would be a great idea, especially since we also had a few Jewish children in our class.

Overall the activity was a great success. Children who wanted to participate, did. During lunch, they were offered a matzoh ball. Some liked it, from what I remember, especially the Jewish children, who knew what it was!
