I started with the decorations and whipped cream so that they are only good to decorate.

Break the white chocolate into pieces, put it in a bag and immerse it in a pot of hot water until the chocolate is completely melted.

(You can also make a countertop from the obtained composition but it will not cool as fast as the sheets.)

After the sheets have cooled completely, we start assembling the cake.

We put on a plate the first sheet of countertop, we syrup it with the syrup prepared from water, sugar and rum essence.

We add a layer of whipped cream, we put the second sheet, we syrup it too, we add the last sheet of countertop we syrup.

We coat the cake in a thin layer of whipped cream. We also keep a little whipped cream for decoration.


Melt the chocolate in a bain-marie and gradually pour the whipped cream, stirring constantly until the chocolate is completely melted.

We put it aside and leave it to cool a bit.

Then dress the cake in chocolate icing and decorate it with the remaining whipped cream and white chocolate decorations.

Crocodile cake

On October 18 it was St. Luke and for a 4 year old Luke I made a crocodile cake. I don't know if I'm posting well here or I need to go to Techniques, please a moderator to help me if I'm wrong.

First I made two tops, the oval one of 4 eggs + 4 tablespoons of sugar + 4 tablespoons of flour + 1 teaspoon of baking powder, the rectangular one of the 5 above.

Here's what you need for this recipe:
8 eggs,
450 g of sugar (I have "cut" the quantity),
2 sachets of gelatin,
4 tablespoons flour,
1/2 l milk,
fruits (oranges, bananas, or compote fruits. what you want and what you have at hand, raisins.),
I only used 6 eggs, recalculating the ingredients (to keep the proportions) well, our chickens were on strike :)

I rubbed the yolks well (I used the mixer) with 300 g of sugar, after which I added gelatin (soaked in cold water, about 100 ml), flour and milk, which I gradually poured.
I boiled the obtained mixture and mixed it continuously, until the composition started to thicken, but without boiling it.

I forgot to tell you, I lined a Jena bowl with cling film and threw in some orange slices and some cherries.

In the boiled composition, after it has cooled, I incorporated the egg whites, whipped with 150 g of sugar, on a steam bath. I mixed lightly.

I divided this cream in two, one part remained white, in it you can put vanilla, fruit cut into pieces. I poured this white composition into the bowl, over the orange slices.

I colored the other side with a little cocoa. You can put rum and raisin essence.
I poured the mixture over the white composition.

I let it cool (minimum 3 hours.).
When it was ready, I turned it over on a plate, and, in a fit of inspiration, I decorated it with cherry blossoms. Fresh.
